    This Chicken and Bacon Wrap with Southwest Ranch Dressing is so easy to make! Using the Instant Pot speeds this recipe up so everything is done in under 20 minutes!

    Chicken and Bacon Wrap with Southwest Ranch Dressing

    Sometimes I just really want a wrap but don’t want to pay at the drive thru for it! So I decided to DIY my own with just a few ingredients. Also, just for fun, I decided to make my own version of Southwest Ranch Dressing to go with the wrap.

    With the Instant Pot, the chicken comes out perfectly and shreds easily. I love how in the time it takes for the bacon to bake, everything is cooked and ready to go. I start with the chicken breasts in the IP, pre-heat the oven for the bacon, and while everything is cooking on their own, I mix together the ingredients for the sauce. Then it’s just assembly.

    I eat these a few ways. If I’m eating the wrap right away, I’ll drizzle my sauce in, wrap it up, and enjoy. If I’m eating it later, I hold off on the sauce. Sometimes, I’ll even turn it into a burrito with a larger tortilla (again, sauce on the side) and load up on the ingredients.

    What You’ll Need To Make These Chicken and Bacon Wraps

    • seasoning: garlic powder, oregano, chili powder, salt
    • chicken stock
    • lime juice
    • chicken breasts
    • bacon
    • flour tortilla
    • lettuce: I used boston lettuce but you can use whatever you prefer
    • shredded cheese

    What You’ll Need To Make The Sauce

    • salsa
    • sour cream
    • onion powder
    • garlic powder
    • dried parsley
    • sriracha
    • lime juice

    How To Make This Bacon and Chicken Wrap at Home

    • Combine the seasoning, chicken stock, and lime juice. In your Instant Pot, add in the chicken breasts and the liquid mix. Close the lid, set the valve to sealing, press manual, and check the timer to 6 minutes. Let natural release after the 6 minutes until you’re done prepping everything else.
    • In a 400F oven, bake the bacon for 12-14 minutes, until crispy.
    • While everything is cooking, combine the ingredients of the sauce and set it aside in the fridge until ready to use.
    • Once the bacon is done, dice it up and set aside. Shred the chicken breasts with two forks and set aside.
    • To assemble, on a flour tortilla, layer on the lettuce, chicken, bacon, and shredded cheese. Top off with the southwest ranch dressing.

    Tips and Notes

    To meal prep, I hold off the sauce to use as a dip and wrap the chicken wrap up in cling wrap or parchment paper to help it keep it together in the fridge. Store in an airtight container for up to 4 days.

    On a larger tortilla, make this into a burrito by adding more ingredients such as avocado, beans, onions, etc.

    The shredded chicken can also be made in a slow cooker by cooking the chicken in the liquid on high for 3 hours.

    Ingredients

    • 1/2 tbsp garlic powder

    • 4-6 strips bacon
    • 6 flour tortilla
    • 1 head lettuce
    • 1 cup shredded cheese

    For the Southwest Ranch Dressing

    • 1/2 cup salsa
    • 1/2 cup sour cream
    • 1/4 tsp onion powder
    • 1/4 tsp garlic powder
    • 1 tsp dried parsley
    • 1 tsp sriracha
    • 1/2 lime, juiced

    Instructions

    • Combine the seasoning, chicken stock, and lime juice. In your Instant Pot, add in the chicken breasts and the liquid mix.
