    Simple Tomato Pasta Made with Canned Tomatoes

    This Simple Tomato Pasta Made with Canned Tomatoes is a quick and simple pasta recipe that you can make in next to no time. It’s also a great recipe for using up the odds and ends in your fridge!



     

    Why You’ll Love This Simple Tomato Pasta Made with Canned Tomatoes Recipe

    • It’s great for using up leftovers. We usually have some shredded chicken from meal prepping and you can use any odds and ends vegetables you have in your fridge!
    • This uses canned tomatoes so it’s great if you don’t have any fresh tomatoes on hand.
    • If you want to make the pasta in the same pot first, this can be a one pot recipe!

    What You’ll Need To Make This Simple Tomato Pasta

    • pasta of choice, I used fettuccine
    • olive oil
    • onion
    • garlic
    • mushrooms
    • salt
    • canned chopped tomatoes
    • spinach
    • parmesan, this is optional. I like that it thickens the sauce quickly.
    • shredded chicken
    • basil

    How to Make This Simple Tomato Pasta

    • Cook your pasta according to the directions on the packaging, reserving some pasta water.
    • In a pot or pan on medium heat, add olive oil and saute onion until soften and add in the mince garlic and saute for a minute.
    • Then add in the sliced mushrooms and salt and continue to saute.
    • Deglaze the pot with up to ½ cup pasta water and then add in the canned tomatoes. Let the sauce simmer for up to 10 minutes or until it has thickened to your liking.
    • Add in the spinach and stir until wilted.
    • Add in some parmesan to thicken some more if desired.
    • Add in the pasta, shredded chicken and basil, mix to combine.
    • Top with some parmesan and red pepper flakes if desired.

    Tips and Notes

    • Deglazing is adding liquid to a hot pan and giving the bottom of the pan a gentle nudge with a wooden spoon. This allows all of the caramelized bits stuck to the bottom to loosen off the pan. You definitely should not skip this step as that’s how you get all that delicious flavour.
    • Add your pasta water slowly. I start with a quarter cup and add more if needed.
    • You can sub out the mushrooms and spinach for whatever vegetables you have on hand.

    Storage Tips

    • Meal Prep: Store your meal prep hummus pasta in an airtight container for up to 5 days in the fridge. Reheat in the microwave or on the stovetop.

    • 227 grams mushrooms
    • 1 tsp salt
    • 796 mL chopped tomatoes
    • 4 cups spinach

    • 2 cups shredded chicken
    • 1 handful basil
