    Spicy Peanut Noodles

    This Spicy Peanut Udon Noodles recipe comes together so quickly and easily that you’ll have dinner ready in no time. It’s also a super customizable recipe so you can change things around and have a slightly different dish every time you make it!

    There’s nothing better than a delicious peanut sauce, especially when that peanut sauce is covering noodles! You only need a handful of ingredients to make this and the only cooking you’ll do is boiling water to put your noodles in.

    I’m not even exaggerating when I say that it only takes a couple of minutes to whip together either. Udon noodles cook in literally 1 to 2 minutes and in that time, I can combine all the peanut sauce ingredients together in a bowl. Then when it’s ready, you can just toss the noodles with the sauce! And that’s it! I almost didn’t share this recipe because it’s so simple.

    Ingredients You’ll Need

    Ingredients needed to make spicy peanut udon noodles.
    • udon noodles — I use fresh udon noodles that are sold at the refrigerated section that takes less than 2 minutes to cook. Other options are frozen udon noodles and dried udon noodles. Frozen udon noodles do have a chewier texture if you have access to that and prefer it. It’s up to you which you’d prefer to use! I went with fresh as this was what’s available to me locally.
    • peanut butter — I use a basic creamy peanut butter. Nothing fancy.
    • soy sauce — I always recommend using low sodium soy sauce.
    • dark soy sauce —  dark soy sauce is saltier than light soy sauce but it gives your noodles that beautiful dark glaze and has a stronger soy flavour.
    • sesame oil — just a bit is all you need.
    • sriracha — you can adjust this based on your spice preference.
    • mirin
    • garlic powder
    • red Thai chili peppers — be sure to deseed this. You can add more or less based on how much heat you can handle.
    • hot water — you need hot water as it will help the peanut butter mix with the other ingredients seamlessly.

    How to Make Spicy Peanut Udon Noodles

    • Spicy peanut sauce in a measuring glass.
    • Cooked udon noodles in a pan.
    • Combine the peanut sauce together and set aside.
    • At the same time, cook the udon noodles as directed on the packaging. Mine just requires me to boil water, cook for 1 to 2 minutes, then drain.
    • In a large bowl or pan, combine the noodles and sauce. Garnish with some green onions and more diced red chili peppers if desired.

    Recipe Tips and Notes

    • Add shredded chicken or cooked ground meat to the udon noodles if you’d like to add extra protien. Tofu would be a great addition as well.
    • If you want to add vegetables to it, you can saute some veggies such as onions, bell peppers, carrots, and mushrooms in a pan before combining the cooked noodles with the peanut sauce.
    • A fried egg also goes really well over top of a serving of the noodles.
    • A side of meaty dumplings also go great with these noodles! My Pork Potstickers and Pork and Kimchi Dumplings pair wonderfully!
    • The noodles keep well but the sauce might look kind of weird when it’s cold. Once you reheat the noodles, just give them a good stir. It should keep for up to 4 days in the fridge in an airtight container.

    • To easily deseed the red Thai chili peppers, roll the chili peppers between your fingers or on the counter and then cut off the stem. Then squeeze out the loosen seeds.

    Ingredients

    • 1 package udon noodles, 450 grams

    For the Peanut Sauce

    • ¾ cup peanut butter, creamy
    • 2 tbsp soy sauce
    • ½ tbsp dark soy sauce, optional. substitute with regular soy sauce if you do not have dark soy sauce.
    • 1 tbsp garlic powder
    • ½ cup hot water
    • 1 tbsp sesame oil
    • 1-2 tbsp sriracha sauce
    • 1 tbsp mirin
    • 3 red Thai chili peppers, or more

    Instructions

    • Combine the peanut sauce together and set aside.

      Added chicken and used sugar free peanut butter. Couldn’t get my hands on Thai chiles so I used Serranos. Very tasty will absolutely make again!
