This Spicy Peanut Udon Noodles recipe comes together so quickly and easily that you’ll have dinner ready in no time. It’s also a super customizable recipe so you can change things around and have a slightly different dish every time you make it!
There’s nothing better than a delicious peanut sauce, especially when that peanut sauce is covering noodles! You only need a handful of ingredients to make this and the only cooking you’ll do is boiling water to put your noodles in.
I’m not even exaggerating when I say that it only takes a couple of minutes to whip together either. Udon noodles cook in literally 1 to 2 minutes and in that time, I can combine all the peanut sauce ingredients together in a bowl. Then when it’s ready, you can just toss the noodles with the sauce! And that’s it! I almost didn’t share this recipe because it’s so simple.
Ingredients You’ll Need
- udon noodles — I use fresh udon noodles that are sold at the refrigerated section that takes less than 2 minutes to cook. Other options are frozen udon noodles and dried udon noodles. Frozen udon noodles do have a chewier texture if you have access to that and prefer it. It’s up to you which you’d prefer to use! I went with fresh as this was what’s available to me locally.
- peanut butter — I use a basic creamy peanut butter. Nothing fancy.
- soy sauce — I always recommend using low sodium soy sauce.
- dark soy sauce — dark soy sauce is saltier than light soy sauce but it gives your noodles that beautiful dark glaze and has a stronger soy flavour.
- sesame oil — just a bit is all you need.
- sriracha — you can adjust this based on your spice preference.
- mirin
- garlic powder
- red Thai chili peppers — be sure to deseed this. You can add more or less based on how much heat you can handle.
- hot water — you need hot water as it will help the peanut butter mix with the other ingredients seamlessly.
How to Make Spicy Peanut Udon Noodles
- Combine the peanut sauce together and set aside.
- At the same time, cook the udon noodles as directed on the packaging. Mine just requires me to boil water, cook for 1 to 2 minutes, then drain.
- In a large bowl or pan, combine the noodles and sauce. Garnish with some green onions and more diced red chili peppers if desired.
Recipe Tips and Notes
- Add shredded chicken or cooked ground meat to the udon noodles if you’d like to add extra protien. Tofu would be a great addition as well.
- If you want to add vegetables to it, you can saute some veggies such as onions, bell peppers, carrots, and mushrooms in a pan before combining the cooked noodles with the peanut sauce.
- A fried egg also goes really well over top of a serving of the noodles.
- A side of meaty dumplings also go great with these noodles! My Pork Potstickers and Pork and Kimchi Dumplings pair wonderfully!
- The noodles keep well but the sauce might look kind of weird when it’s cold. Once you reheat the noodles, just give them a good stir. It should keep for up to 4 days in the fridge in an airtight container.
- To easily deseed the red Thai chili peppers, roll the chili peppers between your fingers or on the counter and then cut off the stem. Then squeeze out the loosen seeds.

- 1 package udon noodles, 450 grams
For the Peanut Sauce
- ¾ cup peanut butter, creamy
- 2 tbsp soy sauce
- ½ tbsp dark soy sauce, optional. substitute with regular soy sauce if you do not have dark soy sauce.
- 1 tbsp garlic powder
- ½ cup hot water
- 1 tbsp sesame oil
- 1-2 tbsp sriracha sauce
- 1 tbsp mirin
- 3 red Thai chili peppers, or more
