    • ramen noodles or instant noodles — or use pasta noodles, udon noodles, yakisoba noodles, etc. Whatever you want.
    • pure sesame oil
    • minced garlic
    • soy sauce – I usually try to use low sodium soy sauce.
    • oyster sauce – don’t worry, while it’s made from oyster extract, it doesn’t taste like oysters!
    • sambal oelek
    • water or vegetable broth
    • mirin
    • green onions
    • optional: toasted sesame seeds, fried onion, and more green onions as garnish.
    sambal oelek chili sauce.

    What is Sambal Oelek?

Sambal Oelek is an Indonesian chili sauce or paste that is typically made from a mixture of a variety of chili peppers. I’ve found that it’s common to find it in major grocery stores now and not just small ethnic stores. If you’ve never tried it before, I suggest starting small as it is quite spicy. I use 1 tbsp in this specific sesame noodle recipe but I’ve made it with 2 tbsp before and I was reaching for water. If you cannot find it in stores, you can get sambal oelek online.

How to Make Sesame Ramen Noodles

    A pot of cooked noodles.
    • Bring a pot of water to a boil and cook your ramen noodles 1 minute under the instructions on the package. Mine cooks in 4 minutes so I cook it to 3 minutes. Drain and set aside.
    • Sesame oil in a skillet, cooking minced garlic.
    • Sesame noodle sauce in a skillet.
    • In a skillet over medium heat, add in the sesame oil and after approximately 30 seconds, add in the minced garlic. Cook until fragrant, approximately 1 minute.
    • Add in the soy sauce, oyster sauce, sambal oelek, water or vegetable broth, mirin, and green onions. Stir and let the sauce cook for a minute.
    • Noodles added to skillet with sauce.
    • Skillet with sesame noodles.
    • Add in the cooked ramen noodles to the skillet.
    • Toss until the ramen noodles have soaked up the sauce.
    • Top with garnishes if desired.

    Tips and Notes

    • If you’d like to make this sesame noodles spicier, add an extra tablespoon of sambal oelek.
    • If you do not have sambal oelek, you can substitute with sriracha. Sriracha is less spicy to feel free to add more.
    • To make the sesame flavour stronger, you can drizzle some toasted sesame oil and toss to coat before serving.
    • To make this sesame ramen noodle sweeter, you can add a drizzle of honey to the sauce or a tablespoon or two of brown sugar.
    • I like to top my noodles with fried onions. They add a nice crunch to the noodles. See the image below to see what I’m referring to!
    Fried red onions.

    Make Ahead Tips

    • Meal prep: store the cooked sesame noodles in an airtight container for up to 3 days in the fridge.
