Freezer Friendly Strawberry Lemon Oatmeal Bars
These Freezer Friendly Strawberry Lemon Bars are a mix between a breakfast bar and a strawberry crumble. I recently had a ton of strawberries shipped to me (Thanks YES!Berries for all the delicious berries!) and one of my favourite ways to have strawberries is in the form of a strawberry crumble.
However, I wanted to find a way to make a strawberry crumble portable and a bit more of a meal prep. So that’s how these super easy freezer friendly strawberry bars were born!
They’re great for bake sales or as a potluck dessert as it only takes a couple minutes to put together and then it’s hands off baking time! I brought in a batch to work and my coworkers gave me their seal of approval. So you’re going to want to bookmark this for later :)
What You’ll Need To Make These Strawberry Lemon Bars
- butter: unsalted
- flour: white all purpose flour
- old fashioned rolled oats: do not substitute with quick oats!!
- honey
- brown sugar
- cinnamon
- salt
- strawberries
- lemon juice
- vanilla extract
How To Make Strawberry Lemon Oatmeal Bars
- Heat oven to 375F.
- Melt your butter in the microwave.
- In a bowl, mix together the flour, rolled oats, honey, brown sugar, cinnamon, and salt. The pour in the melted butter and stir until the dry ingredients become moist from the butter. Scoop out 1/2 cup and set it aside.
- In a 9×9 baking dish, line with parchment paper, and press the oats mix into the dish.
- In a bowl, combine the strawberries, lemon juice, vanilla extract, and flour. Layer the strawberry mix on top of the crust.
- Sprinkle the rest of the oats mix on top of the strawberries.
- Bake for 30-40 minutes. Let cool for 10 minutes before cutting.
- To freeze: let cool completely before freezing them on a sheet pan. Once frozen, transfer the bars into a freezer friendly ziploc bag. This keeps them from freezing together in a lump!
Tips, Notes, and Substitutions
- If you’d like more “crumble” on top of the strawberry oatmeal bars, feel free to double the ingredients of the crust.
- If your parchment paper is having trouble staying put while putting in the crust, use alligator clips on the rim of the baking dish to hold the parchment papers in place!

- 1/2 cup brown sugar
- 2 tsp cinnamon
- 1 pinch salt
- 3 cups strawberries
- 2 tsp flour
- 1/2 lemon, juiced
- 1.5 tsp vanilla extract
