    Thai Inspired Chicken Noodle Soup

    I love chicken noodle soup – it is such a classic soup that never disappoints. Previously, I played with Korean flavours as well as a lemon and rice version as a way to shake things up a bit. Today, I’m back with what I feel is a game changing chicken noodle soup.

    This Thai inspired chicken noodle soup is peanut based, has green Thai curry paste, and each spoonful has amazingly rich bold flavours. You’re going to want to make this ASAP!

    The best part about this chicken noodle soup is that it is peanut based. The peanut butter mixed with the coconut milk gives this soup such a creamy and silky texture.

    As well as texture, the peanut butter adds extra protein, fibre, and is a cost-friendly super ingredient! Did you know that eating peanuts regularly can reduce your chances of developing cardiovascular disease by about 30%? That’s another reason to make this delicious chicken noodle soup this week!

    What You Need To Make This Thai Inspired Chicken Noodle Soup

    • chicken broth
    • coconut milk
    • soy sauce
    • honey
    • green Thai curry paste
    • garlic
    • smooth peanut butter (see how to make your own homemade pb here)
    • mushrooms
    • boneless, skinless chicken thighs
    • egg noodles
    • spinach
    • lime juice
    • topping: toasted peanuts, oregano (or your choice of fresh herbs) 

    What You Need To Make This Thai Inspired Chicken Noodle Soup

    How To Make This Thai Inspired Chicken Noodle Soup

    • In your Instant Pot, add the chicken broth, coconut milk, soy sauce, honey, green Thai curry paste, garlic, and smooth peanut butter. Mix well to combine and make sure there isn’t anything stuck on the bottom of the pot.
    • Next, add in the mushrooms and chicken thighs. Close the lid and set it to seal.
    • Pressure cook for 10 minutes. Quick Release when done.
    • Open the lid and stir the soup. The chicken thighs should be tender and falling apart while stirring, if not, shred them with a fork.
    • Press the Sauté button and add in egg noodles, spinach, and lime juice. The egg noodles should take around 6-8 minutes to cook.
    • Serve immediately with some toasted peanuts and fresh herbs as toppings.

    Tip: If you want to save this for later, store the egg noodles separately so they do not soak up all the liquid!

    Don’t Have An Instant Pot?

    Easily make this recipe on the stove top! Instead of pressure cooking for 10 minutes, let the soup simmer for 20-30 minutes or until the chicken thighs have cooked through. Then mix in the egg noodles, spinach, and lime juice and simmer until the egg noodles are done.

    Ingredients

    • 4 cups chicken broth
    • 398 mL coconut milk
    • 3 tbsp soy sauce
    • 2 tbsp honey
    • 2-3 tbsp green Thai curry paste
    • 2-3 tbsp garlic, minced
    • 1/2 cup smooth peanut butter
    • 227 grams mushrooms
    • 1 lb boneless skinless chicken thighs
    • 100-200 grams egg noodles
    • 3 cups spinach
    • 1 lime juice
    • optional toppings: toasted peanuts, oregano (or your choice of fresh herbs)

    Instructions
