    Homemade Tuna Sushi Bowl

    Step aside expensive poke bowls, today I’ve got a delicious and easy to make lunch idea that uses canned tuna. While in school, I would stock up on canned tuna whenever it was sale because it was such a budget friendly way to get in my omega-3s and protein. At regular price, it was under $2.50 per can so when it went on sale, it was a steal!

    While I’m no longer living off student loans, I’m still pretty budget conscious when it comes to my grocery bill so when I was craving a sushi bowl the other day, I turned to my trusty canned tuna for a tuna lunch bowl. While I love ahi tuna, my wallet does not, especially if it’s not for a special occasion. This is my budget friendly canned tuna poke bowl that I can make regularly without breaking the bank.

    For this tuna bowl meal prep, I used Ocean’s Chunk Light Tuna. Ocean’s is a Certified B Corporation which means they are recognized as meeting the highest standards of social and environmental performance, transparency, and accountability.  I believe in supporting companies help support the ecosystem and who partner up with organizations such as MSC (Marine Stewardship Council) to uphold and improve the standards of sustainable fisheries. It is something I take into consideration when purchasing seafood. Plus, the Chunk Light Tuna is delicious and perfect for this homemade sushi bowl!

    What You’ll Need To Make This Tuna Sushi Bowl at Home

    • sushi rice or regular rice (here’s a tutorial on how to make sushi rice in the Instant Pot if you need one! If not, just follow the instructions on the bag)
    • edamame beans
    • Ocean’s Chunk Light Tuna
    • avocado
    • soy sauce
    • optional: furikake
    • optional: cucumbers

    How To Make This Tuna Sushi Bowl

    • Cook your sushi rice as directed on its packaging.
    • In a bowl, combine the rice with furikake then top with edamame beans, Chunk Light Tuna, avocado, soy sauce, and cucumbers.

    Meal prepping? Here’s how to turn this into a meal prep

    • Some assembly is required! I pack the rice and edamame together and in two small container, I add soy sauce and the furikake.
    • Next I pack my avocado and canned tuna.
    • When ready, I reheat the rice and edamame by sprinkling 1 tbsp of water onto the rice and cover with a damp paper towel and microwave for 60 seconds. Then I add in the toppings.
    • Note: sushi rice can’t last too long in the fridge so I only prep up to 2-3 days for sushi rice. If I need a longer prep, I’ll use regular non-sushi rice!

    Ingredients

    • 1.5 cups sushi rice, or regular rice
    • 2 cups edamame beans
    • 2-4 cans Ocean’s Chunk Light Tuna, either 1/2 or 1 can per serving
    • 2-4 avocado, either 1/2 or 1 avocado per serving
    • 4 tbsp soy sauce
    • 4 tbsp optional: furikake
    • optional: sliced cucumbers

    Instructions

    • Cook your sushi rice as directed on its packaging.
    • In a bowl, combine the rice with furikake then top with edamame beans, Chunk Light Tuna, avocado, soy sauce, and cucumbers.
    • Serve immediately

    To Meal Prep:

    • Pack the rice and edamame together in a container and in two small container, pack soy sauce and the furikake.
    • Bring along 1/2 or 1 avocado and either a full can of tuna or half.
    • When ready, reheat the rice and edamame by sprinkling 1 tbsp of water onto the rice and cover with a damp paper towel and microwave for 60 seconds. Then add in the toppings.

    Notes

    • Sushi rice doesn’t last too long in the fridge so I only prep up to 2-3 days for sushi rice. If I need a longer prep, I’ll use regular non-sushi rice!
    • 1 cup uncooked rice yields approximately 3 cups of cooked right.

      What a beautiful, healthy sushi bowl. I love the edamame and the canned tuna is inspired for a quick lunch or supper. I’ll look for Oceans’s tuna at the store, because i really appreciate companies who are good stewards of the environment. Thanks for the dinner inspiration!

      This sounds healthy and delicious. I love that brand of tuna and use it all the time. What a great option for lunch or dinner. Easy and quick to make. Much better than takeout.

      Carmy, this is genius! We are all about the easy go-to meals in our house and this one fits the bill for sure. Love the way you can reheat it by putting it in the microwave with a paper towel over it. The perfect quick and easy lunch.
