Ingredients You’ll Need

dark chocolate — use chocolate chips or chopped chocolate. If I’m making this with littles in mind, I usually use semi-sweet chocolate, but if it’s for me, I like dark chocolate.
coconut oil — adding coconut oil to the chocolate when you melt it will help make the chocolate shiny and a little more runny when melted.
cocoa powder — this will add more chocolately flavor to your tofu pudding.
maple syrup — for some sweetness. You can also use honey, but I prefer maple syrup.
salt — a pinch of salt will help balance the chocolately flavors.
silken tofu — make sure you are using silken or soft tofu to ensure you have a smooth and creamy base for your pudding.
How to Make Creamy Chocolate Tofu Pudding

- In a microwave-safe bowl, add the chocolate and coconut oil. Microwave on high in 20-second increments, stirring in between until the chocolate is fully melted.

- Add the melted chocolate, cocoa powder, maple syrup, salt, and silken tofu to a high speed blender (or food processor) and blend until smooth and creamy.

- Portion the tofu pudding into ramekins/glasses and serve or refrigerate to set to a firmer texture if desired.
- When ready to serve, top with your favorite toppings! I like some whipped cream and shaved chocolate bits but fresh berries are also a delicious option.

Recipe Tips and Notes
- There tends to be some liquid packaged with silken tofu. Make sure you drain your tofu well and give it a pat dry with a paper towel if needed.
- Topping the chocolate with some flaky sea salt is a delicious option if you forgot to add salt to the pudding!
- Don’t forget to scrape down the sides of your blender as needed while you blend!

Make Ahead Tips
- Meal prep: store the chocolate tofu pudding in an airtight container for up to 4 days in the fridge. Make sure you have a lid or a way to cover the top of your jars. I recommend pre-portioning the pudding ahead of time.
- Freezer: transfer the pudding into an airtight container before storing it in the freezer. Store for up to 3 months.
