This easy Coconut Rice is the perfect side dish! Make it in a couple of minutes on the stovetop with only a couple simple ingredients!
WHAT IS COCONUT RICE?
Like I mentioned in my Instant Pot Coconut Rice recipe post, I’m one of those crazy people who keep buying up all the cans of coconut milk at the grocery store. There’s literally 5 cans in my pantry right now! One of my favourite recipes that I love making with it is this Instant Pot Coconut Thai Curry Chicken Meal Prep but a weekly staple recipe that uses one of my many cans of coconut milk is coconut rice.
Coconut Rice is pretty much rice prepared by cooking it with coconut milk or with coconut flakes. I personally prefer coconut milk over coconut flakes. It’s funny, I’m not a huge fan of coconut flakes but I’ll happily eat anything with coconut milk in it! So today, I’ll be sharing how to use coconut milk to cook coconut rice on the stovetop.

What You’ll Need To Make Coconut Rice on the Stovetop
- basmati rice (do not use instant rice)
- coconut milk, full fat
- water or chicken stock
- lime juice
How to Make Coconut Rice on the Stovetop
- Rinse and drain rice in cold water.
- Next, place the rice in a saucepan/small pot with water, coconut milk, water and lime juice on high heat.
- Bring the liquid to a boil. Stir and reduce the heat to low heat.
- Cook for 10-12 minutes before taking the pot off the heat and letting it rest for 10 minutes.
- Fluff the Coconut Rice and serve.

How To Freeze Coconut Rice
- Once the rice has cooled, freeze it in glass meal prep containers or in silicone freezer bags.
- Store in the freezer for up to 6 months.
- To reheat, transfer the frozen rice to a microwave safe container and microwave until it’s heated through.
- Stir the rice a couple times in the middle of reheating.
- You may want to add a tablespoon or two of water into the container and cover the container with a damp paper towel to help keep the rice from drying out.
Notes on Making This Coconut Rice
- I recommend only using full fat coconut milk.
- I use 2 cups coconut milk with 1 cup water because I usually do a 2:1 ratio of liquid to rice but the coconut milk is creamier/thicker than water so it just needs extra “thin” liquid to cook the rice.
- 1 cup of uncooked rice makes around 3 cups of cooked rice.
- If you don’t have basmati rice, you can use jasmine rice.

- 1 cup basmati rice
- 2 cups coconut milk, full fat
- 1 cup water or chicken stock
- 1/2 lime, juiced
Instructions
