    This easy Coconut Lime Rice is the perfect side dish! Make it in a couple of minutes on the stovetop with only a couple of simple ingredients!

    What is Coconut Lime Rice

    Like I mentioned in my Instant Pot Coconut Lime Rice recipe post, I’m one of those crazy people who keep buying up all the cans of coconut milk at the grocery store. There are literally 5 cans in my pantry right now! One of my favourite recipes that I love making with it is this Instant Pot Coconut Thai Curry Chicken Meal Prep but a weekly staple recipe that uses one of my many cans of coconut milk is coconut rice.

    Coconut lime rice is pretty much rice prepared by cooking it with coconut milk or with coconut flakes. I personally prefer coconut milk over coconut flakes. It’s funny, I’m not a huge fan of coconut flakes but I’ll happily eat anything with coconut milk in it! So today, I’ll be sharing how to use coconut milk to cook coconut rice on the stovetop.

    What You’ll Need To Make Coconut Rice on the Stovetop

    • basmati rice — do not use instant rice.
    • coconut milk — I recommend using full fat coconut milk from a can. Not coconut milk in a carton.
    • water or stock — vegetable or chicken stock adds more flavour but you can also just use water.
    • lime juice — always use fresh lime juice. The flavour is much better than bottled lime juice.

    How to Make Coconut Rice on the Stovetop

    • Rinse and drain rice in cold water. This removes starch and any dust on the rice.
    • Next, place the rice in a saucepan or small pot with the water and coconut milk on high heat. Add lime zest if you’d like a stronger lime flavour.
    • Bring the pot to a boil. Stir and reduce the heat to low heat. Cover partially with a lid.
    • Cook for 10-12 minutes, or until it appears all the liquid has been absorbed into the rice, before taking the pot off the heat and letting it rest for 10 minutes.
    • Fluff the coconut lime rice and stir in the lime juice before serving.

    How To Freeze Coconut Rice

    • Once the rice has cooled, freeze it in glass meal prep containers or in silicone freezer bags. Souper Cubes are a great option as well.
    • Store in the freezer for up to 6 months.
    • To reheat, transfer the frozen rice to a microwave safe container and microwave until it’s heated through.
    • Stir the rice a couple times in the middle of reheating.
    • You may want to add a tablespoon or two of water into the container and cover the container with a damp paper towel to help keep the rice from drying out.

    Recipe Tips

    • I recommend only using full fat coconut milk.
    • I use 2 cups coconut milk with 1 cup water because I usually do a 2:1 ratio of liquid to rice but the coconut milk is creamier/thicker than water so it just needs extra “thin” liquid to cook the rice.
    • 1 cup of uncooked rice makes around 3 cups of cooked rice.
    • If you don’t have basmati rice, you can use jasmine rice.
    • Feel free to add more or less lime juice.
    • Feel free to add a pinch of salt.
