I prefer to use full-fat cottage cheese as it gives me a creamier result, so the texture is closer to mousse. I would recommend sticking to full-fat as it’ll set better as well!
honey — I’m sweetening the mousse with honey, but you can also use maple syrup! I like using honey as it’s thicker than maple syrup, so it’ll help with the mousse setting.
cocoa powder — I recommend using a high quality unsweetened cocoa powder. You can add more if you want a darker, chocolately flavor. You can also use cacao powder if that’s what you have on hand.
vanilla extract — just a dash of vanilla extract to add flavor to the cottage cheese. You can also use vanilla bean paste!
