Why You’ll Love This Recipe
- It only requires a handful of ingredients and if you’ve cooked from my blog previously, you’ll have most of these ingredients on hand! It’s one of my go-to staple meals that I don’t have to run out to the store to make for dinner.
- It keeps really well in the fridge, making for the perfect make-ahead meal. It heats up wonderfully in the microwave at work!
- It super simple to make! You simply saute everything in a skillet, and you’re good to go!
Ingredients You’ll Need
- oil — I’m using sesame oil to cook the green onions, garlic, and grated ginger. It adds a little extra nutty flavor to the dish. You can swap it out for olive oil or avocado oil if you prefer.
- green onions — I divide the lighter, whiter parts from the darker green parts. The whiter part has a sharper, more intense onion flavor, so it’ll be sauteed at the beginning and the darker green will be kept for garnishing at the end.
- ginger — I use 3 tablespoons of grated ginger. When selecting ginger at the store, choose the one with firm, unwrinkled skin. You don’t want the ginger to be old and dried out. If it looks super wrinkly with a tough thick skin, skip it. If you don’t have fresh ginger, you can substitute ¼ teaspoon of ground ginger in place of each tablespoon of fresh ginger.
- garlic — I freeze pre-minced garlic, so I can always have some on hand.
- ground pork — I just get regular ground pork from Costco. Feel free to use extra-lean, lean, or medium ground pork.
- salt — I always use kosher salt in my recipes.
- soy sauce — I use low sodium soy sauce. Use a little less salt if you’re using regular soy sauce.
- honey — make sure you’re using runny honey.
- lime — I finish the dish with fresh lime juice. I recommend using fresh lime as it tastes brighter and more flavorful.
- rice & sesame seeds — I serve this ground pork recipe with jasmine rice but you can also try it with purple rice, coconut lime rice, or cilantro lime rice. I also like to garnish the ground pork with toasted sesame seeds.
How to Make Ginger Honey Pork
- In a large skillet over medium heat, add the sesame oil. Once the pan is hot, add the grated ginger, garlic, and the white parts of the green onions.
- Saute for 1 to 2 minutes or until fragrant.
- Add the ground pork to the skillet and cook until the pork is almost cooked through, around 80% done, around 6 to 10 minutes, depending on the size of your skillet. Make sure to use your wooden spoon to break up the pork as you cook it.
- Add the salt, soy sauce, and honey to the pork and cook until everything is evenly combined. Then, let the pork cook for another minute or so undisturbed so the bottom can crisp up.
- Once the pork is done cooking, remove the skillet from heat and squeeze the juice of one lime on top. Stir until combined.
- Garnish with the dark green parts of the green onions and toasted sesame seeds if desired. Serve with rice or your side of choice.
Recipe Tips and Notes
- This is the cast iron skillet I use.
- Make it spicy by adding in red chili flakes, sriracha, or Chinese chili paste.
- You can add a tablespoon of brown sugar if you want some extra sweetness that has a more caramel-like flavor.
- If you don’t have enough ground pork, you can add ground beef, chicken, or turkey.
- If you want to add vegetables to this, carrots, peas, onions, bell peppers, and snow peas make for a great addition.
- This ginger honey pork is also perfect for lettuce cups!
- While some people don’t peel their garlic before grating it, I do and recommend it!
Make Ahead Tips
- Meal prep: once cooled, store the cooked ground pork in an airtight container in the fridge for up to 4 days. I like to pack it with some jasmine rice or purple rice, along with some cooked spinach for a bit of extra veg.
- Reheat: you can reheat the ground pork and rice in the microwave or stir fry it on the stove in a skillet with a splash of oil.
- Freezer: allow the ground pork to cool before transferring it into an airtight freezer-safe container before storing it in the freezer. Freeze for up to two months.
