    Thai Noodle Salad with Pork

    How many peanut sauces can I share before there’s too many peanut sauce?! To be fair, this peanut sauce is “different” from my Cold Peanut Noodle Meal Prep and is based closer to my Instant Pot Thai Peanut Chicken’s sauce (adapted for non-IP use).

    Anyways, I’m here to tell you that this Thai inspired noodle salad is what you need to make right away. It is so quick to put together so if you need a last minute dinner, this is perfect. It also holds up great so if you need to meal prep then this is for you as well!

    What You’ll Need to Make this Pork Thai Noodle Salad

    For this recipe, I focused on local ingredients. We’ve got Ontario Pork, as well as carrots, and greenhouse cucumbers grown in Ontario. By choosing fresh local ingredients, we help to create jobs as well as support our economic growth in Ontario. Plus, by choosing food that is grown locally to you, the fresher it arrives to you. It’s also a great way to help reduce your eco-footprint as the food is traveling shorter distances to you.

    Need some tips on supporting your Ontario farmers? Look for the Foodland Ontario logo when shopping at your grocery store and/or farmers’ market. Visit Foodland Ontario’s website to find what is available and in season.

    The Ingredients:

    • peanut sauce
      • peanut butter
      • rice vinegar
      • soy sauce
      • lime juice
      • olive oil

    What You'll Need to Make this Pork Thai Noodle Salad

    • rice noodles
    • olive oil
    • garlic
    • ground pork, preferably Ontario Pork 
    • soy sauce
    • salt & pepper
    • carrots, preferably from Ontario
    • cucumber, preferably from Ontario
    • peanuts

    What are rice noodles?

    I’ve used rice noodles in meal preps quite a few times here on this blog and I’ve gotten some DMs/messages about it, so here’s a small FAQ on rice noodles! (if you have more questions, let me know and I’ll try to answer it)

    • What are rice noodles? Rice noodles are noodles made from rice. It is mainly made with rice flour and water. Sometimes tapioca or corn starch are added in order to improve the transparency or change the texture of the noodles.
    • What types of rice noodles are there? Rice noodles come in four sizes: vermicelli, thin, medium and wide. I use them pretty interchangeably.
      • Here’s a meal prep using vermicelli: spring roll in a bowl
      • Here’s a meal prep using wide rice noodles: Instant Pot Thai peanut chicken and noodles 
    • Are rice noodles gluten free? Usually yes. Since they’re made of rice, it is gluten free. However, fresh rice noodles can sometimes contain wheat starch or wheat flour. You’ll have to check the ingredients list to be 100% sure!
    • How to cook rice noodles? They’re so quick to cook – bring a pot to a boil, put in the rice noodles in the pot and it usually takes a couple minutes, no more than 10. The package should state the time.  Be sure to stir it during cooking to avoid clumping.

    How To Make Thai Noodle Salad with Pork

    • In a bowl, mix together the ingredients of the peanut sauce and set aside.
    • Bring a pot of water to boil and add in the rice noodles, cooking it as directed on the package.
    • While doing that, on medium heat, add in olive oil and garlic to a pan. Let it cook for 1-2 minutes before adding in the pork, soy sauce, salt & pepper, stirring and sautéing until done.
    • Once the rice noodles are done, drain the noodles and rinse them under cold water (helps it from lumping together).
    • Add half of the peanut sauce to coat the noodles. Then combine with the pork, carrots, and cucumbers. Top with more peanut sauce, basil if you have on hand, roasted peanuts, and a lime wedge. 

    To store this rice noodle meal prep:

    • Store the rice noodle meal prep for up to 4 days in an airtight container.

    Ingredients

    Peanut Sauce

    • 1 cup peanut butter
    • 2 tbsp rice vinegar
    • 5-6 tbsp soy sauce
    • 2 tbsp lime juice
    • 1/4 cup olive oil, or more if needed

    Rice Noodles

    • 500 grams rice noodles
    • 1 tbsp olive oil
    • 2 tbsp garlic
    • 1 lb pork, preferably Ontario Pork
    • 4 tbsp soy sauce
    • salt & pepper, to taste
    • 2 carrots, preferably from Ontario, shredded
    • 1 cucumber, preferably from Ontario, sliced
    • peanuts

    Instructions

    • In a bowl, mix together the ingredients of the peanut sauce and set aside.
    • Bring a pot of water to boil and add in the rice noodles, cooking it as directed on the package.

    Notes

    You may need more or less olive oil to make the peanut sauce "saucy" as it depends on how thick your peanut butter is. Some pbs are more thick than others!
