Healthy Chicken and Vegetable Stir Fry with Peanut Sauce
Can you believe it’s February because in my head, it’s still 2017. Yeah, I’m one of those people who keep writing the wrong year on forms and by the time I get my head on right, it’s another year. Rinse and repeat. Yep. I’m one of those.
Dates aside, did you know that February is Heart Month? Heart Month is a time where the government tries to bring attention to the importance of cardiovascular health, and what we can to reduce our risk of cardiovascular disease. Cardiovascular disease is the second leading cause of death in Canada. I definitely did a double take when I read that because a way to reduce your risk is to live a healthy lifestyle (work out more, eat healthier, quit smoking, etc) and well, that’s something that I believe is achievable.
One way to eat healthier is by skipping the take out and cooking at home. I hear a lot of complaints that cooking at home takes longer than take out and how stuff they make at home isn’t as delicious. Well I’m here to share with you today a very delicious and easy to make healthy chicken and vegetable stir fry.
While a chicken stir fry can be picked up at a local Chinese take out place, you can never be sure how much sodium or MSGs that is in these take out dishes so the vegetables you get from them aren’t even healthy anymore! So here’s a version that you can make at home and you can know exactly what you are putting in your body! Plus, this recipe makes for the perfect chicken stir fry meal prep.
What You Need For The Healthy Chicken and Vegetable Stir Fry with Peanut Sauce
- chicken breast, cubed
- chicken stock
- peanut butter
- tamari or low sodium soy sauce
- oyster sauce
- garlic
- peanut butter
- cornstarch
- Mann’s Fresh Vegetable’s California Stir Fry
Another complaint I hear a lot when it comes to take out vs homemade is that there are too many components to a dish and after using parts of a vegetable or something, the rest of it just sits in the fridge. Well for one, my answer to that is to either plan your weekly meals out to use the rest of the leftover and two, that’s why I like purchasing the Family Favorites from Mann’s. This bag of California Stir Fry is just enough for this dish and I just a little bit of everything without having to buy a lot, each bag has: broccoli, carrots, and snow peas. Bam, problem solved.
Tips for Making the Perfect Chicken Stir Fry Meal Prep
- Depending on how you like your vegetables, you can cook it before your chicken or with your chicken. I sautéed mine first and then set it aside before cooking my chicken
- Start your rice right away (or your choice of carbs) so by the time you’re done making your stir fry, you’ll be able to eat right away!
- Make extra of the peanut sauce and store it in an air tight container (I use a mason jar) in the fridge so you can make this (or something similar) with the sauce super fast next time!
- I also like to keep extra of the sauce to drizzle on top of the dish
- Chicken Stir Fry into a Meal Prep: I use these cute bento boxes to store my leftovers to bring to work the next day
- Want to add another layer of texture to this? Throw on some non-salted peanuts on top! Crushed, halved, or whole
Healthy Chicken and Vegetable Stir Fry with Peanut Sauce
Ingredients
Peanut Sauce
- 1 cup peanut butter
- 1 tbsp garlic
- 1/4 cup oyster sauce
- 1/4 cup chicken stock
- 1 tsp tamari or low sodium soy sauce
- 1 tsp cornstarch
Chicken and Vegetables
- 2 tsp canola oil
- 1 bag Mann's Fresh Vegetables California Stir Fry
- salt and pepper to taste
- 2 chicken breast, diced
To serve/Optional
- 4 cups cooked rice or your choice of carbs
Instructions
- In a small sauce pan, mix together your peanut butter, garlic, oyster sauce, tamari, chicken stock, and cornstarch. Let this simmer on low and stir occasionally.
- While the sauce is simmering, in a pan, add your 1 tsp of oil and sauté your California Stir Fry veggies until softened, season with salt and pepper. Set it aside.
- Add the rest of your oil into the now empty pan and cook your chicken until it's cooked through - season with salt and pepper to taste.
- Once the chicken is done cooking, combine the vegetables back into the pan and pour in your peanut sauce. Cook for another minute or so until everything has been coated with the sauce.
- Serve with rice or your choice of carbs.
