Healthy Hamburger Soup
Not too long ago, this brothy pasta with chickpeas recipe popped up on my Instagram newsfeed and I knew I needed to make it. It was cozy and definitely hit the spot. Plus who doesn’t love a recipe made from pantry staples and in one pot? Anyways, after finishing up my first batch, I definitely wanted some more but I also wanted it to change it up a bit and make it even heartier and pack more goodness into it. So this is how this healthy hamburger soup came it be!
This healthy hamburger soup is quite an adaptable recipe as you can add more or less vegetables, depending on what you have on hand. Things like frozen peas, carrot, etc would make a great addition to this soup. To give this soup a little bit more of a kick, I added a tbsp of gochujang to the soup. I love the sweet heat that the sauce adds to the soup but if you’re not a fan of spicy, feel free to omit that.
What You’ll Need To Make This Spicy Healthy Hamburger Soup
- olive oil
- onion
- ground beef
- garlic
- sweet potato
- salt
- chickpeas (have an Instant Pot? Here’s how to use it to cook dry chickpeas)
- can of whole tomatoes
- water/broth
- gochujang, omit if you don’t want it spicy
- orecchiette or pasta of choice
- spinach
- parmesan + garnish of choice (cilantro)
How To Make This Healthy Hamburger Soup
- In a large pot or a Dutch oven, heat up your olive oil and then add in your onion, letting it sweat for a minute or two before adding your ground beef to brown. Make sure to break up the pieces of beef.
- Let the onions cook with the beef for a minute before adding in your garlic, sweet potato, a pinch of salt, and chickpeas. Give it a stir before adding in your can of whole tomatoes.
- Stir your soup while breaking up your tomatoes with your wooden spoon on the side of your pot, leave some large pieces if you prefer your tomatoes to be chunkier. Add in your water or broth and gochujang and let simmer for 7 minutes.
- Next, stir in your pasta before letting the soup simmer for another 12-15 minutes.
- Once your pasta and sweet potatoes are cooked through, take the soup off the heat and stir in your spinach.
- Serve with some grated parmesan and garnish.

Make This Into a Meal Prep / Freezer Meal
- If meal prepping, cook the pasta separately and add to the contain the day of eating (reheating it together). This way the pasta doesn’t absorb all the liquid and turn to mush.
- To freeze this healthy hamburger soup for later, skip adding in the pasta and spinach. Add to the pot when you are reheating from frozen.

Ingredients
- 3 tbsp olive oil

- 375 grams ground beef
- 6-8 cloves garlic
- 1.5 cup sweet potato, cubed
- pinch salt
- 15 oz chickpeas, drained and rinsed (1 can)
- 28 fl oz whole tomatoes, (1 can/796 ml)
- 2.5 cup water/broth
- 1 tbsp gochujang, omit if you don’t want it spicy
- 12 oz orecchiette, or pasta of choice
- 4 cups spinach, or as much as you can fit in!
- parmesan + garnish of choice, cilantro
