One Pot Chicken and Vegetable Meal Prep
It feels like time is going by faster and faster and that somehow a whole week goes by and suddenly it’s Sunday night and nothing has been prepped for the week! Anyone else feel this way? I’ve been trying to schedule my week better and more efficiently so my Sundays aren’t so panicked but sometimes life happens.
More than once, I’ve considered just buying lunch and dinner for Monday and then meal prepping afterwards but now with a house to pay for (oh right, this is a thing now. I am stressed, help me!), frivolously buying a whole day’s worth of meals on Mondays, is just too hard for me to justify right now.
This is when this super easy one pot chicken meal prep was born! Combining bite sized chicken pieces that cook quickly alongside with vitamin and fibre packed sweet potatoes and quick cooking snow peas, makes for the perfect speedy meal prep! It takes under an hour, uses one skillet to cook, and can easily be scaled up! I hope you try this last minute meal prep!
What You’ll Need To Make This Easy Chicken and Vegetable Meal Prep
- chicken breasts
- salt & pepper
- paprika
- onion powder
- olive oil
- garlic
- sweet potatoes
- chicken broth
- snow peas
How To Make This Chicken and Vegetable Meal Prep in One Pot
- Cut the chicken breasts into bite sized pieces and season with salt, pepper, paprika, and onion powder.
- In a hot skillet, add in olive oil and garlic before adding in the chicken breasts.
- Cook for 8 to 10 minutes/until the chicken as cooked through, stirring every minute or two.
- Once the chicken has cooked through, set the chicken aside.
- In the same skillet, add in the diced sweet potatoes and chicken broth. Stir and cover with a lid for up to 10 minutes, stirring occasionally.
- Next, add in snow peas and stir in to combine before covering with the lid again for 2 minutes.
- Remove the lid and drain any leftover liquid (or stir and let the liquid evaporate). Stir the chicken back in and season with additionally salt and pepper if you desire.
- Store in an airtight container for up to 4 days in the fridge.
Tips and Notes to Make This Last Minute Chicken Meal Prep
- One pound of chicken breasts is around 2-3 chicken breasts depending on their size. It’s up to you at the end of the day how much chicken you want to put in!
- The smaller the sweet potatoes are diced, the faster they cook through.
- I like to pair this chicken meal prep with my roasted garlic dressing but you could pair it with whatever you have on hand or serve without any dressing.

- 1.5 tsp onion powder
- 1 tbsp olive oil
- 2 tbsp garlic

- 300-400 grams snow peas
