This easy garlic scallion noodles are so easy and versatile. You can substitute the ramen noodles with any types noodles you have on hand. The cook time might increase by a minute or two since pasta noodles take a little longer to cook than ramen noodles but don’t let that dissuade you! I’m obsessed with how delish the green onions get after being crisped up in some oil.

What You’ll Need
- ramen noodles or instant noodles — or use pasta noodles, udon noodles, yakisoba noodles, etc. Whatever you want.

- scallions/green onions
- salt
- minced garlic
- soy sauce – I usually try to use low sodium soy sauce.
- oyster sauce – don’t worry, while it’s made from oyster extract, it doesn’t taste like oysters!
What is the Difference Between Green Onions and Scallions?
There’s not difference between green onions and scallions! They’re the same thing but they just have two different names. Not to be confused with spring onions though as those have bulbs at the bottom unlike scallions/green onions.

How to Make Scallion Ramen Noodles
- Bring a pot of water to a boil and cook your ramen noodles 1 minute under the instructions on the package. Mine cooks in 4 minutes so I cook it to 3 minutes. Drain and set aside.
- Add oil into a skillet or a wok on medium-high heat. Once the oil is hot (slightly shimmer-y) add in the green onions. Stir the green onions in the oil until the colour has changed and they start looking toasty.
- Add in a pinch of salt.
- Add in minced garlic and continue to stir until the green onions and garlic are fragrant.
- Add in the cooked ramen noodles.
- Add in the soy sauce and oyster sauce.
- Toss to coat the noodles evenly with the garlic scallion oil.
- Serve with more green onions as a garnish if desired.
Tips and Notes
- If you’d like to make this sesame noodles spicy, add a tablespoon of sambal oelek or sriracha.
- To make this scallion noodles a bit sweet, you can add a drizzle of honey to the sauce or a tablespoon or two of brown sugar.
- You can cut your onions diagonal or straight. You can also cut them as short or long as you’d like.
- Be sure to wash and pat dry the green onions throughly. If not dried, they will splatter when added into hot oil.
