Air Fryer Breakfast Potatoes
I’m a sucker for a good diner-styled breakfast. A huge platter of eggs, bacon, and potatoes hits the spot every time. My favorite part is the crispy potatoes (also known as home fries) – in my opinion, they are the highlight of the meal, and nothing beats it. They’re crispy on the outside, fluffy on the inside. However, since moving, I haven’t found a diner within walking distance, so I’ve been making my own crispy breakfast potatoes at home.
I preferred using my air fryer to make breakfast potatoes since it’s a pretty hands-off process. No need to worry about flipping or moving them. You just pop it into the air fryer, and with a shake or two, they come out perfect! The air fryer definitely makes breakfast easier as it’s one less thing that needs your full attention in the kitchen. So here’s how you make crispy breakfast potatoes in the air fryer.
What You’ll Need To Make This Crispy Diced Potatoes in the Air Fryer
- potatoes — I use russet potatoes. You can also use Yukon potatoes!
- olive oil — I’m using olive oil, but you can also use avocado oil or another neutral oil of your choice.
- seasoning — I’m seasoning the potatoes with salt, garlic powder, onion powder, and paprika. You can change this around based on your mood. Dried herbs are a delicious addition!
- oil spray — to spray the air fryer basket with.
How To Make Air Fryer Breakfast Potatoes
- Peel and cut the potatoes into 1 inch pieces.
- Coat the potatoes in olive oil and toss the potatoes in the seasoning, making sure they’re all evenly coated.
- Spray the air fryer basket to prevent sticking and add in the potatoes.
- On 400F, air fryer for 20 minutes, shaking at least once at the halfway mark.
- Serve immediately when done.
Recipe Variations
- Add fresh or dried rosemary and thyme in addition to the seasoning.
- Grate some parmesan cheese over the potatoes at the end.
- Add a squeeze of fresh lemon juice and some lemon zest to add a brightness to the potatoes.
Tips and Notes
- If needed, cook the diced potatoes in the air fryer in two batches. By avoiding overcrowding the air fryer, you get crispier home fries! A single layer is ideal.
- Try to make sure the diced potatoes are similar in size as it makes sure they cook evenly.
- This recipe was tested in a Philips air fryer and Cosori air fryer.

- 1 teaspoon salt
- 1 teaspoon garlic powder
- ½ teaspoon onion powder
- ½ teaspoon sweet paprika
- cooking spray
