Ingredients You’ll Need
- blueberries — to keep this blueberry parfait budget-friendly, I use frozen blueberries. It’s much cheaper than fresh blueberries and available year round.
- maple syrup — I cook the blueberries with some maple syrup to add a little extra sweetness. You can also use brown sugar or white sugar. You can also adjust the amount added while you cook the blueberries until they reach your desired sweetness level.
- yogurt — I use Greek yogurt as it has more protein than regular yogurt and who doesn’t want more protein in their day?
- granola — you can use homemade for storebought granola.
How to Make Blueberry Parfaits
- Add the blueberries and maple syrup to a saucepan and cook over medium heat. Stir as the blueberries release their juices.
- As the blueberries cook, start mashing them to break them down to your desired chunkiness. This can take anywhere from 10 to 20 minutes, depending on how chunky you’d like your blueberry sauce.
- To a mason jar, assemble the parfaits by adding ¼ cup of yogurt, ¼ cup of granola, ¼ cup of blueberry sauce, and then another ¼ cup of yogurt, ¼ cup of granola, and ¼ cup of blueberry sauce. Garnish with fresh blueberries and mint if desired.
Recipe Tips and Notes
- Add some lemon zest to the Greek yogurt to make this into a zesty blueberry lemon parfait!
- I like to garnish with some fresh mint, but it’s not mandatory.
- You want your jars (or cups) to be able to comfortably fit 1½ cups of parfait content. My jars are smaller for aesthetics, but when making these outside of a photoshoot, I use a much larger mason jar or cup.
Make Ahead Tips
- Meal prep: make sure you are using jars or cups with an airtight lid. The granola does get a little soft after two days in the fridge, so I wouldn’t recommend making them too far in advance until you don’t mind the granola losing some of its crunch. You can also cook the blueberry sauce ahead of time and keep everything separate and assemble them before serving. The blueberry sauce will keep for 4 to 5 days in the fridge in an airtight container.
