    Chocolate Banana Chia Pudding

    I love banana chia pudding. Like the first time I combined bananas with chia pudding, I thought I was in heaven! That first bite surprised me and then I just kept eating it haha. Later one, I got to thinking, what if… I combined chocolate chia pudding with banana chia pudding? I mean, it’d be like eating dessert but it being 1000x better for you. And that is how this delicious layered chocolate and banana chia pudding was born!

    So what exactly are chia seeds?

    Chia seeds are tiny seeds from the plant Salvia hispanica. You may recognize them from those cute little chia pet commercials from way back when but other than a cute terra-cotta pet, the seeds are packed with healthy goodness. Despite being tiny little seeds, an one-ounce (28 grams) serving of chia seeds contains:

    • Fiber: 11 grams.
    • Protein: 4 grams.
    • Fat: 9 grams (5 of which are omega-3s)

    You can buy them at almost any major grocery store and can last for 4-5 years without refrigeration. Just be sure to store your chia seeds are a cool dry place. They come in both black and white seeds but there is no difference in nutritional content.

    What You’ll Need To Make This Layered Chocolate Banana Chia Pudding

    What You’ll Need For The Chocolate Chia Pudding Layer

    • almond milk — or non-dairy milk of your choice
    • cocoa powder — I like using Dutch-processed cocoa
    • chia seeds
    • maple syrup — you can also use honey
    • seal salt
    • vanilla extract — I recommend real and not artificial vanilla extract

    What You’ll Need For the Banana Chia Pudding Layer

    • almond milk — or non-dairy milk of your choice
    • chia seeds

    • optional: vanilla extract

    What You'll Need For the Banana Chia Pudding

    How To Make This Layered Chocolate Banana Chia Pudding

    • In a mason jar or bowl, stir together the ingredients to make your chocolate chia pudding. Set aside.
    • In a second mason jar or bowl, mash up your bananas then stir together the ingredients to make your banana chia pudding. Set aside.
    • Let it set for a couple of minutes in the fridge before going back in and giving it a second stir. This will ensure it doesn’t separate in the fridge or have clumpings of chia seeds.
    • Let the chia pudding set in the fridge for at least two hours or overnight.
    • When ready to eat, combine some of each chia pudding in a bowl together (or layer them into multiple mason jars however you’d like and store individually to save time)

    Storage Tips

    • I store the chia pudding separately in these 750mL mason jars before combining them into small mason jars.
    • They last for around 4 to 5 days when stored in an airtight container in the first.

    Ingredients

    Chocolate Chia Pudding Layer

    • 1.5 cups almond milk
    • 3.5-4 tbsp cocoa powder
    • 6-7 tbsp chia seeds
    • 5 tbsp maple syrup
    • 1 pinch sea salt
    • 1 tsp vanilla extract

    Banana Chia Pudding Layer

    • 1.5 cups almond milk
    • 1/2 cup chia seeds
    • 2 bananas
    • optional: vanilla extract

    Instructions

    • In a mason jar or bowl, stir together the ingredients to make your chocolate chia pudding. Set aside.
    • In a second mason jar or bowl, mash up your bananas then stir together the ingredients to make your banana chia pudding. Set aside.
    • Let it set for a couple of minutes (5-10 minutes) in the fridge before going back in and giving it a second stir.
    • Let the chia pudding set in the fridge for at least two hours or overnight.
    • When ready to eat, combine some of each chia pudding in a bowl together (or layer them into multiple mason jars however you’d like and store individually to save time)

    Notes

    The chocolate chia layer has a tendency to clump so make sure to mix it really well the first and second time.
