    Garlic Basil Roasted Chickpeas

    Savoury Oven Roasted Chickpeas

    I’m so in love with these savoury oven roasted chickpeas! Basil is my all time favourite herb so it was only a matter on time before I somehow incorporated it into a snack. I suggest you make a huge batch of these because I could not keep my hangs off them after they’ve roasted up.

    Roasted chickpeas makes for a great meal prepped snack as they’re super filling! Plus, having a batch ready on hand is great as these crispy chickpeas make for a great topping – I toss them on top of soups and salads!

    My top tips for the best oven roasted chickpeas

    1. Make sure your chickpeas are 100% dried before putting them into the oven. The less moisture there is on your chickpeas, the more crispy they will be.
    2. Peel your chickpeas. I know it takes a while, but it’s worth it!! To loosen the skin, I run it under water, and while the chickpeas are in the water, I rub them between my hands. After that, the skin will usually come off faster/float to the top of the water, making it easier to skim.
    3. I feel that making your own chickpeas really adds to the flavor. While canned chickpeas are fine, when I cook my own chickpeas from dried, I cook them with garlic and onion, adding extra flavor to the chickpeas! Here’s how I cook chickpeas from dried via my Instant Pot.

    What You’ll Need To Make Crispiest Chickpeas

    • non-stick spray — for the sheet pan.
    • chickpeas — you can use drained canned chickpeas or make your own from dried chickpeas! Here’s how I cook chickpeas in the instant pot.
    • olive oil – or any neutral oil such as avocado oil
    • dried basil — skip the fresh stuff, dried basil is the way to go for this recipe
    • garlic powder
    • onion salt — guys, don’t skip this! This really ties it all together. If you don’t have onion salt, combine some onion powder with a pinch of salt

    How To Make Garlic Basil Roasted Chickpeas

    • Heat oven to 425F.
    • Peel and pat dry the chickpeas with a paper towel.
    • Spray a sheet pan with non-stick spray and spread out the chickpeas onto the sheet pan in a single layer.
    • Roast for 20 minutes, giving the sheet pan 1-2 shakes while it roasts.
    • Combine the dried basil, garlic powder, and onion salt. Drizzle olive oil on top of the chickpeas and toss with the seasoning. Stir with a wooden spoon before placing it back into the oven for 5 minutes.
    • Enjoy immediately or store after cooling.

    How to store roasted chickpeas

    • To keep your chickpeas crispy overtime, store them in a container or jar but don’t seal the lid as the moisture can cause the chickpeas to go soggy after a while.

    • 1-2 tablespoons olive oil
    • ½ tablespoon dried basil
    • ½ teaspoon garlic powder
    • ½ teaspoon onion salt
