Healthy Make Ahead Snack Boxes
So on more than one occasion, I’ve been unprepared and needed a quick and healthy lunch while on the road. There’s almost always a Starbucks on every block or highway exit so it’s easy for me to get to one and buy a healthy lunch. However, I don’t know about you but over $6 a box is really add up and at the end of the day, it consists of two eggs, some cheese, like 5 grapes, apple slices, and some pb. If I was a little more prepared, I can DIY it myself! So that’s pretty much what I did – with H off on a little road trip, I made a couple with some modifications to keep things a little different so he can snack healthily (and cheaply) as he drives. *Okay so I know I named them “snack” boxes but if you have a little one, an entire snack box could be a meal!
What You’ll Need To Make these Healthy Make Ahead Snack Boxes
- eggs (check out my post on making the perfect hard boiled eggs)
- fruit of choice
- cheese
- peanut or nut butter of choice
- mini rounds
- tip: if you can’t find a container or individual nut butter packs, you can do what I did and use mini red solo cups (lol, I know but it works!)

Ingredients
- 4-8 snacking rounds, I used Ozery Bakery's
- 8 eggs
- cheese
- nut butter
- grapes
- apples
Instructions
- Boil your eggs (instructions here). Once eggs are cool, assemble your snack boxes with a little bit of everything and store in the fridge.

What a great idea for a healthy snack! I’d much prefer put together my own little snack box like this anyway. I’m weird about other people handling my hardboiled eggs. I don’t know what it is, lol. Not to mention, you never really know how fresh those pre-packaged snack packs are. A least with this, you’d know! Fresh and crisp every time.

Omg I totally get what you mean! I’m always wondering about those pre-packaged in a liquid hard boiled eggs when I see them. I’d much prefer making my own whenever I can.

I agree it doesn’t seem like a lot of food for $6, and why not do it myself! I think my big Achilles heel during the week is not having my snacks planned ahead. I think I’ll load up on the healthy and skip the snack machine this week. Thanks for a great post!

There are so many times I’ve been tempted to buy a snack box when I’m hungry, but I always have a hard time spending money on something I could make at home! I love all the ideas for the boxes in this, and it gives me no excuse to not make my own! Plus, the mini red solo cup idea is BRILLIANT!

Make-ahead snack boxes are my favorite way to eat breakfast and lunch during the busy week. Can’t tell you how much money I’ve saved doing this over the years, especially when I’m traveling. I’m all about making healthy snacks to take on the go, but it never occurred to me to add eggs! I usually go with cheese, Triscuits, fruit and maybe some jerky. I’m definitely trying these very soon. I’m on the hunt for Ozery Bakery rounds!

I always see the cute little boxes at Starbucks, and then I see the price, and I’m like, whoa…not so cute! Haha. What a great idea to make them yourself. I really need good snacking options this time of year, when everything around me is coated in sugar and chocolate (temptations!). We’ll definitely be packing these up when we take our road trip in a couple of months!

I LOVE this! I made the mistake of grabbing one of the snack boxes from Starbucks for the kids the other day while on a road trip and they have been asking for one everytime they see Starbucks since. They will love these homemade versions, especially if they get to help put it together! Plus how yummy are those snacking rounds? They have started stocking them at our Costco so they have become a fan favorite around here!
