Ingredients You’ll Need

genmaicha — genmaicha is a type of Japanese green tea that combines green tea leaves with roasted brown rice. The name “genmaicha” is derived from two Japanese words: “genmai,” which means brown rice, and “cha,” which means tea. The rice may pop during the roasting process, resembling popcorn, and this is sometimes why genmaicha is sometimes referred to as “popcorn tea.” I recommend avoiding low-quality genmaicha tea, as in some cheaper brands, you’ll notice that the green tea leaves are almost like dust.
water — to steep the tea in.
brown sugar — I like using dark brown sugar or you can use my brown sugar syrup.
milk — for a rich and creamy milk tea, I use whole milk. However, you can use any milk, even non-dairy milk.

How to Make Genmaicha Milk Tea

- Use a milk steamer to steam your milk if you’d like hot milk. I use my trusty smeg.
- In a heat proof cup, add the genmaicha and hot water (180F to 190F/82C to 88C). Steep for a minute and strain the tea. Set aside.
- Add the brown sugar to a glass and pour the hot tea on top. Stir until the sugar dissolves.

- Add the milk on top. Stir well to combine before enjoying.

Recipe Tips and Notes
- Turn this into a genmaicha bubble tea by adding some tapioca pearls.
- You can steep the tea for longer if you’d like a stronger tea flavor for this genmaicha latte.
- If you want to enjoy this cold, use cold milk and add ice cubes to the milk tea.
- When steeping the tea, make sure you have the correct temperature. Water that’s too hot can burn the tea leaves, creating a bitter or astringent taste. I personally have this kettle where I can set the temperature as I drink tea very often, especially matcha, where the temperature really matters.
- If you want a fruity note to this green tea milk tea, you can add some blueberry simple syrup!
Does genmaicha have a lot of caffeine?
There is caffeine in green tea, so there is caffeine in this milk tea. However, on average, genmaicha tea is less caffeinated and contains about half the amount of caffeine as a cup of regular Japanese green tea.
