Green Lentil Salad with Hummus

This delicious and easy Lentil Salad with Hummus is a delicious way to use leftover cooked lentils!

Green Lentil Salad

I’m kind of obsessed with this lentil salad. It’s filled with everything I love – peas, avocado, hummus, and lentils! I mean, what’s not to love about these ingredients. This salad with packed with healthy goodness and takes little to no time to put together.

If you’re not in the mood to cook, you can purchase store-bought hummus, and the only cooking you’ll have to do is the lentils. And if you’re like me, where you batch meal prep lentils with the Instant Pot on the weekends, the lentils are already pre-cooked so all you’ve got to do is cut open an avocado! So easy!

What You’ll Need To Make This Salad

  • hummus – store bought is fine but this is my homemade hummus recipe if you prefer homemade!
  • mixed greens
  • green lentils – this is how I cook green lentils in my Instant Pot.
  • green peas – I use frozen ones that I cooked up really quickly in boiling water. Frozen is just as good as fresh :)
  • red onions
  • avocados
  • optional: I added some pita chips are an extra crunch!

How To Make This Green Lentil with Hummus Salad

  • Spread a layer of hummus on a plate then top with mixed greens, cooked green lentils, green peas, red onions, and avocados chunks.
  • Top off with some pita chips or cracks for an extra added crunch.

Recipe Variations

  • Hummus can be turned into a hummus dressing if you prefer.
  • Add more greens to this if you’d like: green onions, asparagus, green beans, and more!
  • pita bread or naan is a great addition to this too. Use it to whip up the hummus or pack the greens and hummus instead of a pita bread!

Meal Prepping Salad

  • If meal prepping this, layer in the order of: hummus, red onions, green lentils, peas, and mixed greens. Then add the avocado on the day of as it will go brown if you cut it ahead of time!

Ingredients

  • 2 cups hummus
  • 5-6 cups mixed greens
  • 2 cups cooked green lentils
  • 2 cups green peas
  • ½ red onions, diced
  • 2 avocados, cubed

Instructions

  • Spread a layer of hummus on a plate then top with mixed greens, cooked green lentils, green peas, red onions, and avocados chunks.
