Chicken Strawberry Avocado Salad
I love when salad has fruit in it. It just adds this extra bit of fresh fruity flavour to it that makes me forget for a second that it’s a salad lol. No one likes a boring salad!
You may have seen this strawberry green salad in my Instagram stories previously! A few folks have asked so I thought I’d turn it into a blog post to share exactly what’s in it!
To make this salad into more of a meal than a side, I added an extra serving of protein in the form of shredded chicken to bulk it up. This salad also a great recipe to use up leftover chicken! If you want to skip it, I’d sub in some chickpeas or tofu!
What You’ll Need To Make This Strawberry Green Chicken Salad
- mixed greens
- strawberries
- shredded chicken breasts, here’s how I make shredded chicken in the Instant Pot.
- red onions
- basil, chopped roughly or ribboned
- tarragon
- slivered almonds
- avocado, sliced or cubed
- roasted garlic dressing with tarragon (my friend Jan made this spin off for a chicken dinner and guys… try it with tarragon, you won’t regret it!)
How To Make This Easy Salad for Lunch
- Follow this recipe to make your own roasted garlic dressing if you’d like to use homemade dressing. Mix in a small handful of roughly chopped tarragon.
- In a large bowl, combine all your ingredients. If not eating right away, store the dressing and the avocado on the side.
- For a meal prep, store in an airtight container for up to 4 days.
Easy Substitutions for This Chicken Strawberry Avocado Salad
- sub in or add in addition to the almonds more nuts such as pine nuts, cashews, walnuts, pecans, sunflower seeds, pumpkin seeds, etc. However, be sure to not overdo it on the nuts and seeds as they’re dense in calories but are eat a ton of without noticing!
- sub out chicken for tofu, chickpeas, or hard boiled egg for a boost in protein.
- sub in hummus instead of a garlic dressing if you prefer.

Ingredients
- 0.5-1 cup roasted garlic dressing with tarragon, or dressing of your choice
- 142 grams mixed greens, (1 container)
- 3 cups strawberries, squared or sliced
- 2-3 cups shredded chicken breasts
- 1/4 red onion, sliced thinly
- 1/4 cup basil, chopped roughly or ribboned
- 1/4 cup tarragon
- 1/4 cup slivered almonds
- 2 avocado, sliced or cubed
