    Instant Pot Coconut Lime Rice

    This easy Instant Pot Coconut Lime Rice is the perfect side dish! Fresh and zesty, this coconut lime rice goes well with any meal. Make it in under 20 minutes with only a couple of simple ingredients!

    What is Coconut Rice?

    Coconut Rice is pretty much rice prepared by cooking it with coconut milk or with coconut flakes. I personally prefer coconut milk over coconut flakes. Today, I’ll be sharing the coconut milk method cooked with an Instant Pot. I’m one of those crazy people who keep buying up all the cans of coconut milk at the grocery store. There are literally 5 cans in my pantry right now!

    • easy — there’s not much to do! The hardest part of this whole recipe is probably zesting the lime!
    • flavourful — the coconut and lime comes together to make for an extremely flavourful rice.
    • fast — it only takes a couple of minutes to prep then the Instant Pot works its magic.

    Ingredients You’ll Need to Make Coconut Rice in the Instant Pot

    • basmati rice — do not use instant rice. This recipe was developed for white basmati rice. If you change the rice, the results may not be the same.
    • coconut milk — I always use full fat coconut milk. Specifically the T&T brand one. I find others to be watery or tend to separate. I do not recommend using the coconut milk from a carton in the milk aisle.
    • water — you’ll need a splash of water. For extra flavour, you can use chicken or vegetable stock.
    • lime — you’ll need lime zest and lime juice. I highly recommend using fresh lime juice (since you’ll need to zest it anyways). Bottled lime juice doesn’t have the same fresh, bright taste.
    • butter — just a little bit of butter for some extra flavour.
    • salt — just a pinch
    • cilantro — if you think cilantro tastes like soap, skip it.

    How to Make Instant Pot Coconut Lime Rice

    • A pot with coconut milk and rice.
    • rice in the instant pot.
    • An instant pot with coconut lime rice.
    • Rinse and drain rice in cold tap water.
    • In an Instant Pot, combine the coconut milk, water, lime zest, salt, and butter.
    • Add the rinsed rice into the Instant Pot. Do not mix the rice in, simply gently pat the rice down if needed.
    • Close and seal the lid, press manual and set the Instant Pot for 6 minutes (high pressure). Once done, let it Natural Pressure Release for 8 minutes before Quick Releasing.
    • Fluff the rice, add the cilantro, and lime juice. Mix to combine.

    How To Freeze Instant Pot Coconut Lime Rice

    • Once the rice has cooled, freeze it in glass meal prep containers or in silicone freezer bags. Souper Cubes are a great option as well.
    • Store in the freezer for up to 6 months.
    • To reheat, transfer the frozen rice to a microwave safe container and microwave until it’s heated through.
    • Stir the rice a couple times in the middle of reheating.
    • You may want to add a tablespoon or two of water into the container and cover the container with a damp paper towel to help keep the rice from drying out.

    Recipe Tips and Notes

    • This coconut rice recipe has only been tested in an Instant Pot DUO Plus 60 6qt. A larger or smaller IP may need adjustments in the liquid ratio.
    • 1 can of coconut milk is around 2 cups.
    • 1 cup of uncooked rice makes around 3 cups of cooked rice.
    • Feel free to add more or less lime juice.
    • It’s easier to zest a lime before juicing it. If you keep your limes in the fridge, bring it to room temperature and roll the lime under your hand on the counter to loosen the juices. This helps you get more juice out of the lime!
    • Don’t like cilantro? Try basil and parsley or skip it entirely.
    • Leftovers keep for up to 4 days in an airtight container in the fridge.

    • I always recommend you rinse your rice and cilantro. Rinsing the rice helps remove some of the starch so it’s less sticky and remove any dust. Rinising the cilantro helps remove any random debris or dirt.

    • 1 lime, juiced and zested
    • 1 tbsp unsalted butter
    • 1 pinch salt
    • 1 bunch cilantro, chopped
