Leftover Turkey Hand Pies
Hand pies are a staple in my meal prep rotation since they freeze well, can be reheated straight from the freezer, and makes for a great snack or breakfast. After Thanksgiving, we tend to have a ton of leftover turkey and making hand pies are the perfect way to use it up! Why? You know that feeling you get after eating all the turkey during the holiday season and you’re like never again?? Well because these leftover turkey hand pies are freezer friendly, you can eat it a month or two from Thanksgiving – aka when we’re no longer sick of turkey ;)

What You’ll Need To Make These Freezer Friendly Leftover Turkey Hand Pies
- leftover turkey
- olive oil
- onion
- garlic
- puff pastry
- shredded cheese
- egg
HOW TO FOLD THE HAND PIES
I’m putting this before my how to make them section because I wanted to show you a photo of how I fold them first! I use a 5″ bowl to help cut out my puff pastry into circles.
After putting my filling onto the puff pastry that I’ve cut into a circle, I fold the pastry in half horizontally. If you prefer cutting them into squares, that’s fine as well. It doesn’t really matter for this recipe to be honest, it’s just about how you want them to look. To seal them, I pressed down on the side with the tips of a fork.
Alternatively, you can seal them like I did my beef empanadas, repulgue style. Here’s the youtube video of how I folded them for my empanadas. Honestly, it doesn’t have to be perfect. They kinda come out looking all the same after baking anyways lol. As long as they’re sealed, that’s all that matters!
How To Use Leftover Turkey to Make Hand Pies
- Chop up your turkey into small pieces and set aside.
- In a pan on medium heat, add olive oil and onions. Cook for 3-4 minutes until they’ve softened before adding in the garlic and turkey. Cook until the turkey is heated through, up to 5 minutes. Set aside.
- Using a 5″ bowl as a template, cut out circles in your puff pastry (or just cut into 4 squares).
- Place your filling into the sheets and top with shredded cheese. Fold the puff pastry in half, sealing the edge with a fork.
- Brush the top of the hand pie with an egg wash (one egg beaten and mixed with 1 tbsp of water).

Place the hand pies onto a sheet of parchment paper in a sheet pan and then put it in your oven.

Bake for 15 minutes or until the pastry is golden brown.
HOW TO FREEZE AND REHEAT FROZEN LEFTOVER TURKEY HAND PIES
- To store, once your hand pies have cooled, wrap them tightly in cling wrap and store in an airtight container before freezing them.
- To reheat, unwrap your individual hand pies straight from the freezer and place on top of a paper towel before microwaving for 1 minutes.

Ingredients
- 2.5 cups leftover turkey
- 1 tbsp olive oil
- 1/2 onion, chopped finely
- 3 cloves garlic, minced or grated
- 2 sheets puff pastry
- 1 cup shredded cheese
- 1 egg
Instructions
- Heat oven to 350F.
- Chop up your turkey into small pieces and set aside.
