If you’re looking for ways to use up your leftover Thanksgiving turkey or leftover Christmas turkey, then you need to use your leftover turkey to make this stir fry! It’s so easy and full of bright, fresh ingredients.

- Since the turkey meat is already cooked, this turkey stir fry comes together so quickly! Not including cutting up the vegetables, this stir fry takes around 10 minutes to cook. Not bad for a weeknight meal! It’s even better if you’re someone who cooked a giant turkey and frozen some leftover turkey meat. Just thaw your meat and add it to this stir fry for an easy meal later on!

- This is one of my favorite leftover turkey recipes as it’s so easy to customize based on what fresh vegetables you have on hand at home!
Ingredients You’ll Need
- stir fry sauce — I’m basing this leftover turkey stir fry sauce on my shrimp stir fry with noodles recipe. You’ll need low sodium soy sauce, honey, orange juice, mirin, sesame oil, cornstarch, and garlic powder.
- oil — I use olive oil to stir fry my ingredients but you can use any you have on hand such as avocado oil.
- onion — I use half a yellow onion but feel free to use a full onion.
- red bell pepper — I like using red bell pepper as it’s sweeter but you can also use yellow or orange bell pepper.
- snow peas — I love the sweetness that snow peas adds to a stir fry. Snap peas are great too if you prefer the crisp, snappy texture. Snow peas can be a bit tedious as you have to remove the stringy bit and the tip but I don’t mind. The strings are fibrous and removing them will help them become more tender.
- broccoli — I cut a head of broccoli into florets.
- turkey — this stir fry is a great way to use up leftover Thanksgiving turkey. I usually have too much left after Thanksgiving or Christmas and this is a great way to use it without having to eat just turkey as-is for another few days! I also like to make extra turkey if I’m making my dutch oven turkey breasts or instant pot turkey breast for Sunday dinner to make this stir fry for an easy meal prep for the week.
- noodles — use whatever noodles you like! I used chow mein noodles but you can use lo mein noodles, ramen noodles, or even spaghetti noodles.
How to Make Leftover Turkey Stir Fry
- Combine the sauce ingredients and set it aside.
- In a large skillet over medium heat, add the oil and then the sliced onions. Saute for 2 minutes.
- Add the sliced red bell pepper and snow peas to the skillet and saute for another 2 to 3 minutes.
- Add the broccoli florets to the skillet and cook for another minute.
- Add the cooked turkey and continue to cook for another minute.
- Meanwhile, cook your noodles according to the package (mine only requires one minute to cook in boiling water).
- Add the cooked noodles and stir fry sauce to the skillet and toss everything to combine. Cook for at least 2 minutes to give the sauce time to thicken.
- Serve as is or garnish with some toasted sesame seeds and green onions.
Recipe Tips and Notes
- You can follow this guide on building a perfect stir fry for some variations on your stir fry sauce.
- I don’t add salt to this stir fry as the soy sauce is already salty and your turkey is likely to already have been heavily seasoned. If you’re using poached turkey or didn’t add too much salt to your original turkey meat or you’re using store-bought pre-made turkey, you can add salt to onions after you saute them and add a pinch more salt before adding the broccoli.
- Other vegetables I love for this stir fry is mushrooms (this is require some additional cooking before the onions are added to the skillet), julienned carrots, cauliflower, peas, baby corn, green beans, spinach, napa cabbage, and more!
Make Ahead Tips
- Meal prep: once cooled, store the cooked meatballs in an airtight container for up to 4 days in the fridge, depending on the freshness of your turkey. If you are using leftover turkey, this stir fry will only be as good as long as the turkey is good for. For example, if your turkey is 2 days old, I would only keep the turkey stir fry for 2 more days in the fridge.
- Reheat: you can reheat this turkey and noodle stir fry in a skillet or in the microwave.

Ingredients
For the Stir Fry Sauce
- ¼ cup soy sauce, low sodium
- ¼ cup honey
- ¼ cup orange juice
- 1 tablespoon mirin
- 2 tablespoons sesame oil
- 2 teaspoon cornstarch

- ½ yellow onion, sliced

- 200 grams snow peas
- 1 head broccoli, cut into florets
- 1 pound cooked turkey, sliced or chopped
- 355 grams noodles, I used chow mein noodles
Instructions
- Combine the stir fry sauce ingredients and set it aside.
- In a large skillet over medium heat, add the oil and then the sliced onions. Saute for 2 minutes.
- Add the sliced red bell pepper and snow peas to the skillet and saute for another 2 to 3 minutes.

Notes
- Start cooking your noodles accordingly! Since mine only take a minute in a pot of boiling water, I cook mine with a minute before adding it to my skillet. If you’re using noodles that take longer to cook, make sure to start earlier.
