    This homemade sugar cookie coffee syrup is so easy to make at home with a handful of ingredients! This festive, sweet, and buttery coffee syrup is perfect for your next iced or hot latte or even in mocktails, cocktails, ice cream, pancakes, and more!

    Inspired by Starbucks’ Sugar Cookie Oat Latte and Sugar Cookie Almond Milk Latte, this homemade sugar cookie syrup lets me make cafe-styled lattes in the comfort of my own home!

    Why You’ll Love This Recipe

    • It is very easy to make homemade coffee syrups! It’s perfect for when you want to try a fun new flavor without committing to a giant store-bought bottle. I’ve done that a few times and turns out I did not enjoy the flavor and I had to find ways to give the bottle away.
    • I love the sugar cookie latte and since it’s a seasonal drink, it’s not always available when I’m craving it. Making this homemade sugar cookie syrup means I can enjoy this seasonal drink year round!
    • It’s very easy to adjust the flavor. You can make it more buttery by adding more butter extract and less vanilla extract. You can make it even sweeter by adding more sugar! This recipe is adapted from Starbucks’ and modified to what I prefer!

    Ingredients You’ll Need

    Ingredients needed to make homemade Starbucks sugar cookie syrup.
    • brown sugar — I highly recommend using dark brown sugar as it has a deeper caramel flavor due to the higher amount of molasses. You can use light brown sugar if you prefer. If you use regular granulated white sugar, you’ll get the sweetness you need for the simple syrup but not the deep, caramel or toffee-like flavor. This is the exact dark brown sugar I use but whenit’s sold out, I use this one.
    • vanilla extract — like in a sugar cookie, you’ll need vanilla extract for the vanilla notes.
    • butter extract — while the original recipe did not include butter extract, I thought it added a rich, buttery sugar cookie flavor that was key to making this syrup taste like a cookie! You can easily find this online. I also got a bottle from my local Bulk Barn.
    • almond extract — a little bit goes a long way for almond extract. It adds a sweet flavor

    How to Make Sugar Cookie Syrup

    • Add the brown sugar and water to a small saucepan over medium heat. Bring it to a boil and then lower the heat.
    • Simmer, making sure to stir until the sugar has completely dissolved, for 10 minutes.
    • Remove the simple syrup from the heat and stir in the vanilla extract, butter extract, and almond extract.
    • Let the syrup cool to room temperature and transfer to an airtight container before storing in the fridge or using.

    Recipe Tips and Notes

    • If it gets too thick for your liking, you can stir a teaspoon of water at a time into the syrup until it’s at your desired consistency.
    • Make sure to lower the heat to simmer once the syrup reaches a boil. You don’t want too much water to evaporate.
    • If you want the caramel notes of the brown sugar to be less pronounced, you can do half white sugar, half brown sugar.
    • This sugar cookie syrup is not just for your lattes! Use them in your cold foams, drizzle it over a bowl of ice cream or over some pancakes and waffles!
    • You can easily double this recipe if you have plans to use more than 1 cup’s worth within 2 weeks.

    Storage

    • Store the sugar cookie simple syrup in an airtight container in the fridge for up to 2 weeks!
    Can I use real butter in place of butter extract?

    I don’t recommend using real butter as it could cause the syrup to solidify in the fridge.

    • 1 cup water
    • 3 tablespoons dark brown sugar
    • 3 teaspoons vanilla extract
    • 1 teaspoon butter extract
    • ¼ teaspoon almond extract
