- honey — use your favorite honey! Honey comes in many flavors, such as clover honey, wildflower honey, or orange blossom honey. I always recommend local honey when possible. As honey is the main flavoring agent, using good quality and flavorful honey will do you wonders. If you don’t have honey, you can try my lavender simple syrup.
- lavender — make sure to get culinary-grade lavender. I’m quite lucky that there are a ton of lavender farms in Ontario, and I purchased mine at this shop in Dundas. You can also find it on Amazon.

How to Make Honey Lavender Syrup
- In a small pot, combine the lavender, honey, and water over medium heat.
- Stir as you bring the syrup up to a simmer. No need to bring it up to a boil, a gentle simmer is all you need.
- Simmer for 2 minutes or until the honey is dissolved into the mixture, and then remove the syrup from the heat and let it steep for 10 to 25 minutes, depending on how strong you’d like the lavender honey syrup to taste.
- Strain the mixture into an airtight container.
- Let cool to room temperature before sealing it and storing it in the fridge.
Recipe Tips and Notes
- A fine-mesh sieve or cheesecloth is great for straining the syrup.
- I like to do a little taste test when the lavender is steeping to see how strong I’d like the flavor to be. Be careful, though, as the mixture is hot.
- If you do not have honey on hand, you can use sugar and make my regular lavender syrup recipe instead.
