    Made with three ingredients, this Lavender Simple Syrup comes together quickly and easily. This lavender-flavored syrup adds a delicious and sweet floral note to coffees, teas, lemonades, and more!

    You won’t believe how easy it is to make lavender syrup at home. Even better, it’s pretty fast, as once the syrup has come up to a simmer, you just let it sit to infuse itself. It doesn’t get much easier than that! I love the subtle taste of lavender that some drinks, such as a london fog, has at my local cafe, and with this simple syrup, it’s so easy to replicate the drink at home!

    Why You’ll Love This Recipe

    • This homemade lavender syrup recipe is super easy to make. It only requires three ingredients: sugar, lavender, and….water! That’s a pretty short list of ingredients. Since a bag of lavender is usually quite large, you can literally make a batch of this lavender whenever you want, as sugar is pretty much a staple in most kitchens, and water is…water.
    • This syrup is perfect for coffees, teas, lemonades, cocktails, and more. I especially like it in my london fog in the winter and in my lavender lemonade in the summer.
    • This syrup lasts around 3 weeks in the fridge, so it’s perfect for making ahead of time and keeping in your fridge for when the mood strikes for something floral.

    Ingredients You’ll Need

    Ingredients needed to make lavender simple syrup.
    • lavender — make sure to get culinary-grade lavender. I’m quite lucky that there are a ton of lavender farms in Ontario, and I purchased mine at this shop in Dundas. You can also find it on Amazon.
    • sugar — I use simple white granulated sugar. Nothing fancy! You can also use brown sugar if you want a deeper caramel taste. However, it might overpower the lavender a bit, so be careful!
    • water

    How to Make Lavender Simple Syrup

    • In a small pot, combine the lavender, sugar, and water over medium heat.
    • Stir as you bring the syrup up to a simmer to make sure the sugar dissolves.
    • Simmer for 2 minutes and then remove the lavender syrup from the heat and let it steep for 10 to 25 minutes, depending on how strong you’d like the syrup to taste.
    • Strain the mixture into an airtight container.

    Recipe Tips and Notes

    • A fine-mesh sieve or cheesecloth is great for straining the syrup.
    • I like to do a little taste test when the lavender is steeping to see how strong I’d like the flavor to be. Be careful, though, as the mixture is hot.
    • The more purple the lavender, the more purple in the lavender syrup. It doesn’t affect how delicious the syrup is!

    Storage

    Once cooled, store the lavender-flavored syrup in a mason jar or syrup bottle for up to 3 weeks in the fridge.

    How to Use Lavender Syrup

    Here are some ways you can use lavender syrup:

    • to sweeten a latte
    • add to sparkling water to make lavender-flavored soda
    • add to a london fog for a boost in lavender flavor
    • combine it with lemonade, as lavender pairs beautifully with lemon
    • add floral flavors to your favorite cocktails such as lavender gin, lavender French 75, or lavender gin fizz
    • add a tablespoon to a lavender tea to boost the lavender flavor
    • add the syrup to some milk and froth it for a lavender tea latte
    • add it to frosting or icing
    • drizzle it over a cake

    • Strain the mixture into an airtight container. Let cool to room temperature before transferring to the fridge.
