Tacos… but with an avocado. It’s hard to go wrong with this switcharoo! Load up the halved avocados with the easiest taco meat and toppings of your choice for an easy dinner in under 30 minutes!
Taco Stuffed Avocado
On this week of cooking with what’s in my kitchen as we’re holed up inside, I’m sharing this delicious taco stuffed avocado I’ve been making! H and I have been trying our best to stay home unless we have to get groceries (or into work for H) so I’ve been doing my best to use up everything we have in the fridge before gearing up for a grocery run. It’s been a little hard for me since before moving and the world being on lockdown, I was used to going to the grocery stores 3-4x a week.
We’ve had to get creative with our meals and I’ve got to say, this stuffed avocado might just be one of my favourites! I was looking in my pantry and spotted the taco seasoning and thought it’d be nice to have a little Taco Tuesday night but we didn’t have any shells. However, I did have a ton of avocados sitting in my fridge so I thought “why not?” before stuffing the taco meat inside the shell. Not very conventional but hey, it was delicious and I’d do it again in a heartbeat.
What You’ll Need To Make This
- olive oil
- ground beef
- taco seasoning
- avocado
- lime
- salt
- red onion: or whatever onions you have on hand.
- grape tomatoes: or cherry tomatoes
How To Make Taco Stuffed Avocados
- Add oil to a skillet on medium-high heat before adding in the ground beef. Cook for 5-8 minutes, breaking up the beef with a spatula as you go.
- Once cooked through, add in the taco seasoning alongside 1/4 cup of water. Saute until the liquid as been absorbed. Set aside when done.
- Halve the avocados, remove the pit, and using a spoon, scoop out some of the avocado.
- Squeeze on the lime juice, sprinkle some salt on, and then stuff the avocado shells with the taco meat mixed with some diced onions and tomatoes.
- Dice up the scooped out avocado and serve it on the side with the rest of the onions and tomatoes, with some lime and salt.
Recipe Variations
- swap out ground beef for ground turkey or chicken
- add shredded cheese (we were out!)
- top with some sour cream or yogurt
- while the beef is cooking, add in 2 tbsp of tomato sauce if desired
Tips and Notes
- leftover taco meat can be frozen and stored for up to 3 months as an easy meal prep.
