Thai Peanut Chicken Meatballs
You guys are going to love this Thai Peanut Chicken Meatballs! The secret ingredient to making this meal prep second-helping worthy is the peanut butter. The peanut butter added to the sauce makes it so deliciously creamy and adds healthy fats, antioxidants, and fibre. That’s right, peanut butter adds so much more than just its flavour texture. Even though they’re small, peanuts are actually a superfood! And bonus, for every ounce of peanut butter you use, you are getting 8 grams of protein. Pairing peanut butter with these chicken meatballs makes this recipe a protein bomb!
Growing up, the fastest and most effective way for me to get a lunch or calories in was a quick peanut butter and honey or jam sandwich. I kinda feel like this recipe is a more adult version of that. Instead of spreading peanut butter on some bread, I’m using it to make a rich creamy sauce and pairing it up with meatballs. If you have meatballs handy and ready to go (hello freezer friendly meatballs!), this sauce takes around the same amount of time it would for you to toast up some bread and spread peanut butter on it!
What You’ll Need To Make this Thai Peanut Chicken Meatball Meal Prep
- chicken meatballs (here’s my recipe for them)
- olive oil
- red curry paste
- coconut milk
- smooth peanut butter
- salt
- crushed peanuts and herbs to garnish with if you desire
Note: for this recipe, I use my homemade chicken meatballs recipe, however, if you’re on a time crunch, you can always use store-bought ones. I know not everyone has time to roll their own meatballs regularly!
How To Make This Thai Peanut Chicken Meatball Meal Prep
- Make/cook your meatballs the way you prefer. I oven bake mine following the recipe linked above in the ingredients list.
- 5 minutes before your chicken meatballs are done cooking, in a large pan, mix together your olive oil, red curry paste, coconut milk, smooth peanut butter, and salt. Let it cook on medium-low heat for 3 to 5 minutes.
- Once everything is well combined, toss your meatballs in the sauce.
- Add some crushed peanuts and basil on top as a garnish and serve with your choice of side!

Ingredients
- 40 chicken meatballs
- 1 tbsp olive oil
- 2 tbsp red curry paste
- 398 ml coconut milk, 1 can
- 2.5 tbsp smooth peanut butter
- 1 tsp salt, or to taste
- crushed peanuts and herbs to garnish with if you desire
