Peanut Thai Chili Brussels Sprouts
The love that I have for peanuts and peanut butter is on an obsessive level at this point. After a trip to Costco and ending up with way too much Brussels sprouts in my fridge, my first thought was hey, what if I mix it with peanuts? Well, here is the result! A delicious peanut thai Brussels sprouts recipe for you to make with your next meal. Get ready to have your taste buds do a little happy jig!
WHAT ARE BRUSSELS SPROUTS?
Brussels sprouts are a small compact bud of a variety of cabbage. Brussels sprouts are named after the fact that they were cultivated in Belgium in the 16th century which is why they’re called Brussels sprouts and not brussel sprouts.
HOW TO MAKE BRUSSELS SPROUTS DELICIOUS
To avoid the bitterness of Brussels sprouts, I recommend roasting them in the oven. Roasting them with some oil causes the Brussels sprouts to caramelize and gives it a sweeter and nutty flavour. Pair that with this amazing Peanut Thai Chili flavour combo and you’ve got yourself a winner!
WHAT YOU’LL NEED TO MAKE THIS Peanut Thai Chili BRUSSELS SPROUTS
- Brussels sprouts
- garlic
- thai chili peppers
- olive oil
- salt & pepper
- creamy peanut butter
- lime juice
- soy sauce
- water
- peanuts (toasted if you’d like)
HOW TO MAKE THIS EASY Peanut Thai Chili BRUSSELS SPROUTS
- Heat your oven to 425 and line a baking sheet with parchment paper.
- Rinse the Brussels sprouts then cut off their bottom and then in half. A leaf or two may fall off but that’s okay, toss it into the baking sheet if you want or discard it.
- Drizzle your olive oil onto the Brussels sprouts, garlic, and thai chili and then toss with a pinch of salt and pepper.
- Spread evenly on your baking sheet.
- Roast for 25-30 minutes, until the sprouts are golden around the edges.
- While the Brussels sprouts are in the oven, in a small bowl, whisk together your peanut butter, soy sauce, lime juice, and a splash of water. Once the Brussels sprouts are done, toss them together. Top with toasted peanuts if you wish.
USING BRUSSELS SPROUTS IN A MEAL PREP
- These Brussels sprouts will last around 3 days in the fridge in an airtight container. Store the peanut sauce separately if not serving immediately.

Ingredients
- 1 lb Brussels sprouts
- 3-4 cloves garlic
- 2-3 thai chili peppers, sliced
- 1.5 tbsp olive oil
- salt & pepper, to taste
- 1/2 cup creamy peanut butter
- 1 tbsp lime juice
- 2 tbsp soy sauce
- 1-2 tbsp water
- toasted peanuts, optional
Instructions
