These Air Fryer Hasselback Potatoes only require a couple of ingredients and a few simple steps to make. Thinly sliced and then air fried to crispy perfection, it’s so easy to make hasselback potatoes in an air fryer.
I love making potatoes in my air fryer like my air fryer breakfast potatoes, air fryer baby potatoes, and air fryer baked potatoes. It’s such an easy way to cook them and the best part is, unlike the oven, it doesn’t raise the temperature of the house. Crispy on the outside and fluffy on the inside, you’ll love this hasselback potatoes air fryer edition!

- It’s faster to cook these hasselback potatoes in the air fryer. I love just tossing them in the air fryer and have it ready in 30 minutes. It’s much faster than cleaning out the oven of my sheet pans and cast irons then waiting for it to preheat.
- They’re easy to make ahead and then reheat again in the air fryer to keep the exterior crispy.
- You can easily change up the seasoning to suit your personal preference.
Ingredients You’ll Need
- potatoes — you’ll need russet potatoes. I always try to grab ones of similar sizing so they cook up in the same amount of time.
- butter — unsalted butter is my go-to so these hasselback potatoes don’t come out too salty.
- salt and pepper
- garlic — the garlic can be tricky. I try not to brush too much of the minced garlic onto the potatoes as they can burn so I try to shove the garlic inbetween the cuts. You can use garlic powder to make things easier.
How to Make Air Fryer Hasselback Potatoes
- Rinse and scrub the potatoes. Slice the potato into ¼ inch slices without slide the knife all the way down. You can place the potatoes between two chopsticks or skewers to help with that.
- Combine the melted butter, salt, pepper, and garlic.
- Brush the potatoes with the butter mixture. If using freshly minced garlic, try to get the garlic between the cuts to protect them from burning.
- Transfer as many potatoes as you can fit in a single layer in your air fryer basket.
- Air fryer at 400F for 25 to 35 minutes, depending on the size of your potatoes. Brush on more butter at the half way more. I try to add the garlic that’s sunk to the bottom of the butter mixture to the tops of the potatoes near the end of the air frying cycle so it doesn’t burn.
Recipe Tips and Notes
- At the beginning, I try to tuck the mince garlic brushed onto the potatoes inbetween the cuts of the potatoes. I try to add the garlic that’s sunk to the bottom of the butter mixture to the tops of the potatoes near the end of the air frying cycle so it doesn’t burn.
- You can also add some olive oil to the potatoes if you prefer.
- I like to serve my hasselback potatoes with some sour cream and fresh chives but you can use whatever you’d like. Bacon is a great choice as well. You can also add some shredded cheese the last few minutes of air frying to make it a cheesy hasselback potato.
- Other seasonings you can try are smoked paprika, onion powder, herb butter, or flavoured oils.
- To tell if your potatoes are done, a toothpick or skewer will easily poke through.
- Don’t stack the potatoes on top of each other.
Use a starchy potato such as russet or Yukon gold. If you use a waxy potato such as red potatoes, the exterior won’t have the same crispy skin and the inside won’t be as fluffy.
You can store extra hasselback potatoes in the fridge in an airtight container for up to 3 days. Reheat them in the air fryer at 350F for 6 to 7 minutes to warm them through and keep the exterior crispy.
Soaking the potatoes can help remove some starch and make the potatoes but I skipped this step. I find that it didn’t make too much of a difference and it cuts down on prep time.
It’s up to you but I love the potato skins as it crisps up nicely.
