I love portobello mushrooms. They’re thick, meaty, and have an intense umami flavor. One of my favorite things to do is to grill them, but I don’t always want to fire up the grill just for when I’m craving portobello mushrooms, so I’ve started making them in the air fryer!

Ingredients You’ll Need
- soy sauce — it’s very important that you use low sodium soy sauce or light soy sauce. Do not use regular or dark soy sauce, as this recipe can get really salty with it.
- sesame oil — you can use pure sesame oil or toasted sesame oil, depending on how toasty you’d like the mushrooms to taste.
- seasoning — I use garlic powder, onion powder, salt, and pepper.
- portobello mushrooms — buy mushrooms with firm whole caps with an even texture. Store them in a brown paper bag with the top open so that the moisture is absorbed to keep them from spoiling quickly.
- oil — you’ll need a bit of oil sprayed into the air fryer basket. You only need a tiny bit, so don’t worry if you don’t have an oil spray.
How to Make Air Fryer Portobello Mushrooms
- Combine the soy sauce, sesame oil, garlic powder, onion powder, salt, and pepper in a bowl.
- Add the portobello mushrooms, one at a time, to the mixture and toss to coat. A brush is helpful to get the mixture all over the mushrooms.
- Spray some oil into the air fryer basket and place the portobello mushroom caps gill-side up into the air fryer. Feel free to spoon a bit of the leftover sauce into the gills (but not too much or it’ll be salty!).
- Air fry for 10 minutes at 400F.
- Garnish with parsley if desired and serve.
Recipe Tips and Notes
- My portobello mushrooms were super large. If you have slightly smaller ones, you can most likely fit four into your air fryer basket.
- When cleaning the mushrooms, there’s no need to wash or soak them. You can gently rinse them and pat them dry or gently rub off any dirt from the caps.
- Add a pinch of cayenne powder, sriracha sauce, or hot sauce to the marinade if you’d like a bit of heat in the mushrooms.
- If you’re a fan of herbs, then a combination of some dried basil, rosemary, sage, and thyme makes for a great addition to the mushrooms.
- I love serving these air fried portobello with some coconut rice or cilantro lime rice.
- I don’t flip the mushrooms because all the delicious moisture is held in the gills. If you flip it, it just ends up in the bottom of your air fryer basket.
Make Ahead Tips
- Meal prep: once cooled, store the cooked mushrooms in an airtight container for up to 4 days in the fridge.
- Reheating: I like to reheat leftover portobello mushrooms in the air fryer, but you can also reheat them in the microwave.
