I’ve been obsessed with roasting asparagus. It feels like every time I go to the store, I end up coming home with a bunch of asparagus! To make sure you’re getting the most out of asparagus season, here’s how to select the freshest asparagus at the store, as well as the how to store asparagus.
How To Choose Asparagus
Look for bright green or violet-tinted spears with firm stems. Make sure the tips are closed and compact (instead of loose/opened). When the asparagus bunch is squeezed, it should squeak. Avoid asparagus stalks that appear woody.
How To Store Asparagus
- Keep the rubber band on to hold the bunch together, and trim up to an inch off the ends of the asparagus.
- Stand the asparagus up in a glass or jar (I like using a wide mouth mason jar) with about an inch or two of water.
- Store in the fridge for up to a week, changing the water whenever it starts to look cloudy/muddy.

- fresh asparagus
- olive oil
- salt and pepper
How To Roast Asparagus
- Heat oven to 400F.
- Trim the ends off the asparagus by snapping off the ends or cutting with a knife.
- Place the trimmed asparagus out on a baking sheet and drizzle with olive oil.
- Season the asparagus with salt and pepper.
- Roast in the oven for about 10-15 minutes or until they’re tender.
Variations
- sprinkle parmesan on top of the asparagus
- tuck in a few thyme sprigs between the asparagus
- squeeze a wedge of lemon on top of the asparagus
- at the end, add a handful of mozzarella cheese and minced garlic and broil until the cheese has melted
- season with garlic and onion salt instead of regular salt and pepper
Tips and Notes
- The fastest way to remove/trims all the ends of the asparagus for roasting, I will snap one’s woody end off and use it as a guide for cutting off the rest of the asparagus ends with a knife.
