Looking for a delicious low carb way alternative to lasagna? Here’s a delicious pasta-less lasagna!
Low Carb Chicken Lasagna
No pasta chicken lasagna, keto chicken lasagna, low carb chicken lasagna, chicken breast lasagna, this recipe can go by many names but the important takeaway from this recipe is that this was the last recipe I made before I moved and I pretty much had a nothing in my kitchen. I had packed up almost all of my pantry (so all my pasta was gone!) but was having a major lasagna craving.
I didn’t feel like going through the notions of making a lasagna (lol) so this recipe happened. So if you’re craving lasagna but don’t want to do all the layering involved (or go buy pasta then pack it up again), then you’re in luck. Essentially you’ve got everything you need to make lasagna: a ton of cheese and marinara without the work of making a lasagna ;)
What You’ll Need To Make This No Pasta Chicken Lasagna
- chicken breast: 2 sliced in half, this also cuts down on baking time
- butter, melted
- salt, pepper, garlic powder
- ricotta cheese
- egg: adding an egg to ricotta cheese helps to bind the cheese for lasagna so it doesn’t ooze out of the when cut
- parmesan & asiago cheese mix: or just one or the other if you prefer
- marinara sauce: here’s how I make homemade marinara
- shredded cheese: I used a mix of cheddar and mozzarella
- basil
How To Make This Low Carb Chicken Lasagna
- Heat oven to 400F.
- Spray non stick on a sheet pan, then place your chicken breasts evenly spaced apart from each other.
- Cover the chicken breasts with melted butter and season with salt and pepper.
- In a bowl, mix together the ricotta cheese, egg, and the parmesan & asiago cheese mix before dividing it into 4 to spread across each chicken breast.
- Next, top each chicken breast with some marinara and cheese.
- Bake in the oven for 15-20 minutes, until the breasts are cooked through.
- Top with some basil and serve.
Other ways to make this Chicken Recipe
Want to change things up? Pound out the chicken breasts super thin then instead of baking them as is, roll them up to make chicken lasagna roll ups! Use toothpicks to hold the roll up in place.
Alternatively, you could slice the chicken breasts opened, butterfly styled, and place the ricotta mix, marinara, and cheese inside so it becomes a stuffed chicken breast recipe.
Lastly, you could also add in some spinach on top of the marinara, under the cheese, to make this a littttttle bit more healthy.

- 1 egg
- 3-4 tbsp parmesan & asiago cheese mix, or just one or the other if you prefer
- 8 tbsp marinara sauce
- shredded cheese, I used a mix of cheddar and mozzarella, enough to cover each chicken breast
- basil, to garnish
