This sweet potato, bacon, and egg meal is a super simple Paleo Breakfast Meal Prep that you can make in less than an hour.

- It’s something everyone will love. This paleo meal prep is also whole30 friendly. H doesn’t care for labels and will just eat whatever’s good and he finished up a whole bowl in minutes so this one’s a winner in our household.
- It’s simple. It doesn’t require any fancy ingredients and substitutions, just wholesome delicious items you probably already have in your kitchen.
- You can easily customize this. Make it spicier, make it more savoury, change, increase the bacon, whatever you want!
What You’ll Need
- bacon — check for sugar-free, nitrate-free, paleo-friendly bacon.
- sweet potatoes — be sure to cut them into bite sized pieces so they don’t take too long to cook.
- onions
- salt and pepper
- eggs
How to Make This Paleo Friendly Breakfast
- In a frying pan, add in your bacon over medium heat and cook until the bacon is done. Flipping at least once. Around 4-7 minutes, depending on your bacon, pan, and how crispy you like it.
- Note: I like to use the cold pan method, I place my bacon into a cold pan and let it come up to medium heat. No need to add any oil or butter to the pan since the bacon fat that renders out cooks the bacon up nicely.
- Once done, remove the bacon and place it on some paper towels to absorb the extra oil.
- Do not drain the bacon fat from the pan. Add in the diced sweet potatoes and onions. Season with salt and pepper and sauté over medium heat until cooked through. Approximately 15 to 20 minutes.
- Note: if you need a larger pan to cook up your diced sweet potatoes, simply transfer the bacon fat over to the other pan.
- While the sweet potatoes and onions are cooking, cook your hardboiled eggs with your method of choice. Instructions for stovetop eggs, Instant Pot eggs, and air fryer hardboiled eggs.
- Once done, cut up your bacon and assemble your bowls.
Recipe Variations
- I like to add some avocado to this for some extra healthy fats.
- Make it spicy with the addition of some red pepper flakes or hot sauce.
- Make it savoury with the addition of dried basil, dried oregano, or dried herbs of your choice.
- Add some additional vegetables of your choice.
Make Ahead Tips
- Meal prep: once you’ve portioned out the meal and it’s cooled, store the cooked paleo breakfast meal prep in an airtight container for up to 4 days in the fridge.

- 3-4 sweet potatoes, peeled and diced into half inch cubes
- 1 large onion, diced
- salt and pepper, to taste
- 4 eggs, or 8 eggs if you want 2 eggs per meal
