A Hearty Breakfast Meal Prep
These delicious hearty breakfast bowls are inspired by my taco breakfast bowl and the go-to diner breakfast plates. We’ve got cajun potatoes, scrambled eggs, shredded cheese, and salsa to kick start the day with. They’re super easy to make (roast the potatoes, scramble the eggs, combine), only require a handful of ingredients, and can be easily customized to a variety of preferences.

What You’ll Need To Make This Budget Friendly Breakfast Meal Prep + Costs
- potatoes ($1.47) – russet potatoes are great for roasting.
- olive oil ($0.07)
- cajun seasoning ($0.20)
- butter ($0.28) – unsalted butter is my preferred choice
- eggs ($1.40)
- shredded cheese ($1.50)
- salsa ($1.04) – mild, medium, spicy: take your pick. I usually go for mild since you can always add a splash of hot sauce if needed.
These breakfast diner meal prep bowls comes out to $4.50 for 5 servings.
Disclaimer – I mention this in my Youtube video but I am Canadian, specifically in Ontario, this means my calculations are in Canadian Dollars which at the time of writing this, $10 CAD = $7.60 USD. I also live in a higher cost of living area so my grocery bill is a bit on the higher side. Hopefully this means you can make the meal preps in my series for less than I do. (Also, Canada got rid of pennies so we round up/down to the nearest 5/10 cents.) You can take a look at this post if you’d like to see how I did the math for this recipe.
How to Meal Prep These Breakfast Diner Bowls
- Heat oven to 450F.
- Add diced potatoes onto a sheet pan, coat with olive oil and cajun seasoning. Mix with your hands until the potatoes have been coated and spread them out in a single layer before baking for 50 minutes.
- To make the scrambled eggs, whisk together the eggs, melt butter in a non-stick pan, and add the eggs to it. Add a pinch of salt and stir the egg mixture until scrambled and cooked through.
- Once everything is done, put together the bowls by adding the roasted cajun potatoes on the bottom, then eggs, shredded cheese, and salsa.
- Enjoy or let cool before storing in the fridge for up to 5 days.
Tips and Notes
- If you have milk, add a splash of that to your scrambled eggs for fluffier eggs.
- Some oven baked bacon is a great addition to this meal prep as well as ham!
- I really like cajun seasoning for the potatoes but if you don’t have any, you can always go with the garlic powder, paprika powder, and salt trio. You can never go wrong with that combination.

- Want to make this meatless or dairy-free? Swap the butter for vegan butter and eggs for tofu and make a tofu scramble. Top with vegan cheese or skip it altogether.
