Cheap but Delicious Breakfast
Breakfast can be difficult sometimes but with this breakfast sausage bowl, you can stop reaching for milk and cereal! This recipe is so easy to make in the oven. While I meal prep this into 5 bowls, this makes for an easy breakfast for a crowd since you can pop everything in the oven and spend the rest of your time brewing up some coffee!

What You’ll Need to Make These Breakfast Meal Prep Bowls
- breakfast sausages ($3.33) – I use pork sausages but you can use whatever you prefer such as chicken sausages or turkey sausages.
- potatoes ($1.47) – russet potatoes are great for roasting.
- red onion ($1.82)
- olive oil ($0.07)
- salt and pepper ($0.10)
These breakfast sausage meal prep bowls comes out to $6.70 so you’ve got a lot of wiggle room to add in different vegetables to roast so there’s more variety!
Disclaimer – I mention this in my Youtube video but I am Canadian, specifically in Ontario, this means my calculations are in Canadian Dollars which at the time of writing this, $10 CAD = $7.60 USD. I also live in a higher cost of living area so my grocery bill is a bit on the higher side. Hopefully this means you can make the meal preps in my series for less than I do. (Also, Canada got rid of pennies so we round up/down to the nearest 5/10 cents.) You can take a look at this post if you’d like to see how I did the math for this recipe.
How to Make These Breakfast Sausage Meal Prep Bowls
- Heat oven to 400F.
- Place the sausages onto a wired rack on top of a sheet pan and prick each sausage a couple times.
- On a second sheet pan add the diced potatoes and onions and drizzle on olive oil and salt and pepper. Mix to combine and spread everything out in a single layer on the sheet pan.
- Bake everything for 15 minutes before flipping the sausages and stirring the potatoes before baking for another 15 minutes.
- Remove the sausages and increase the heat to 450F and bake for another 20-30 minutes, keeping an eye on it and removing the red onions if they start to burn.
- When done, let everything cool and portion out into your meal prep containers.
Recipe Variations
- You can also swap out some of the russet potatoes for sweet potatoes, squash, and other root vegetables. Or do a mix of all of them. Just make sure that they’re all cut in a similar size so they cook up at the same time.
- The pork sausages can be swapped with turkey for a lighter option.
Tips and Notes
- To keep the onions from burning, I roughly chop the onion and keep some of the layers together. The thicker they are, the longer it takes for them to burn.
- The potatoes are pretty much blank slates so you can season them however you’d like. Try some dried herbs like basil and oregano, or fun seasonings like sriracha and lime, everything but the bagel, etc! The world is your oyster here.
- I like these airtight glass containers to meal prep with.
- I line my sheet pans with tinfoil to make for an easier clean up, especially with the pork sausages.
