Spinach, Sun Dried Tomato, and Cheese Stuffed Chicken Meal Prep
Okay I know putting spinach and sun dried tomato together is not exactly groundbreaking but for some reason, I never thought to meal prep it. I love making stuffed chicken as a weeknight dinner and it looks fancy enough to serve to guests (without taking too much effort haha) so the other day when I was craving it at work, it hit me, “why haven’t I done a meal prep with stuffed chicken?”
Stuffed chicken is one of my favourite recipes because it is a very adaptable recipe.
You can mix and match vegetables, cheeses, herbs. From stuffed your chicken breast with mushrooms, cheese, and basil, to cream cheese with a mix of herbs and bacon, I promise that you’ll find a combination that you’ll fall in love with.
Hell, if you’re feeling a little bit extra and want to impress, you can even wrap the whole chicken with prosciutto, bacon, breadcrumbs, and more! So if you don’t have the ingredients listed down below for your meal prep, you can definitely find something to stuff your chicken with in your pantry!
How To Stuff Your Chicken Breasts
There are a few methods of stuffing chicken breasts:
- Pound out the chicken breasts so they are nice and thin. Place your stuffings evenly across the breast and roll the breast up kind of like a fruit roll up.
- At the top of your chicken breast (the round part, not the pointy bottom), stick your pairing knife into it and wiggle it back and forth like a windshield wiper, careful to make sure the “hole” you’re making doesn’t poke out the sides of the chicken. Stuff your stuffing into the hole.
- The method I’m using today: butterfly cut your chicken breast open, place your stuffing in the middle, and then use toothpicks to close up the breast and seal it. This method uses the most toothpicks but can fit more stuffing that the pocket style and doesn’t require pounding the breast out.
Tips and Tricks for Making the Perfect Spinach, Sun Dried Tomato, and Cheese Stuffed Chicken Meal Prep
- I wanted to be a little bit extra so I used some panko on the chicken because I wanted it to have an extra crunch. This is optional if you don’t want to
- If you want to add more flavour to the breading, you can add some cheese/salt/pepper/garlic powder/etc to the panko
- I layered my cheese first on the chicken then between the spinach and sun dried tomato
- You can use a sheet pan instead of a cast iron as you don’t want to over crowd your pan and the cast iron can only fit so many chickens
- I use these Glasslock square airtight containers
Spinach, Sun Dried Tomato, and Cheese Stuffed Chicken Meal Prep
Ingredients
- 4 chicken breast, butterflied
- sun dried tomatoes
- 2 cups baby spinach, roughly chopped
- 1/2 cup shredded cheese
- 1 egg, beaten, salt and peppered
- 1.5 cup panko
optional sides
- 4 cups spinach
- 3 cloves garlic
- 1 cup couscous
Instructions
- Heat your oven up to 400F.
- After butterflying your chicken, layer on sun dried tomatoes, baby spinach, and shredded cheese onto your chicken breast.
- Pin the chicken breast back together with a toothpick, dip your chicken breast into an egg mixture, then cover your chicken breast with panko or breadcrumbs.
- Place your chicken breasts into a cast iron or a sheet pan and put it in the oven for 25 minutes (or until the chicken is cooked through).
- In the meantime, to make this into a full meal prep, I sautéed spinach with garlic and boiled water to put my couscous in. Or serve the stuffed chicken with your side of choice.
