This Thai inspired Chopped Salad with Peanut Sauce is super easy to make and is full of delicious flavours and bright colours!
Full of fresh flavours and bright colours, you’re going to love this Thai inspired salad. While a lot of these salads uses cabbage as their salad base, I use romaine lettuce because I have a ton of them to use up after a trip to Costco lol. At the end of the day, it’s a salad so feel free to change up the greens to whatever you have on hand!
Why You’ll Love This Chopped Salad
- It is perfect if you have leftovers. If you have leftover chicken, shred it up and make this salad with it. Leftover vegetables? Add them in as well! I always have a carrot lying around because I buy them by the bag so this chopped Thai salad uses it up.
- It’s easy. There’s literally no cooking involved if you already have chicken ready (leftovers, rotisserie, etc). Even if you don’t, you can easily make shredded chicken in the Instant Pot in next to no time.
- Peanut sauce makes everything taste better. It’s the law.
What You’ll Need
For the Salad

- shredded chicken — if you don’t have any shredded chicken on hand, here’s how to use your Instant Pot to make shredded chicken.
- edamame beans
- green onions
- red onions
- carrots — peeled.
- cucumbers — I always buy the seedless cucumbers to make prepping the salad easier.
- peanuts
For the Sauce
- peanut butter — use smooth peanut butter.
- rice vinegar
- soy sauce — low sodium
- lime juice — I always recommend using fresh lime juice and not bottled lime juice.
- olive oil
How to Make This Chopped Asian Salad
- In a bowl, combine the lettuce, chicken, edamame, carrots, cucumber, red onions, green onion, and peanuts.
- In a small bowl, combine the peanut butter, rice vinegar, soy sauce, lime juice, and olive oil to make the sauce.
- Combine and serve.
Make Ahead Tips
- Meal prep: store the salad an airtight container for up to 3 to 4 days in the fridge. Pack the peanut sauce separately. Peanuts can be added on the day off to keep them extra crunchy if desired.
- Freezer: Cooked shredded chicken can be frozen in an airtight container so you can make this salad easily in the future.

Ingredients
For the Salad
- 4-6 cups romaine lettuce, chopped
- 4 cups shredded chicken
- 2 cups edamame beans
- 1½ cups green onions
- 1 red onions, diced
- 2 carrots, cut into matchsticks
- ½ cucumber, sliced
- 1 cup peanuts
For the Sauce
- 1 cup peanut butter
- 2 tbsp rice vinegar
- 5-6 tbsp soy sauce
- 2 tbsp lime juice
- ¼ cup olive oil
Instructions
- In a bowl, combine the lettuce, chicken, edamame, carrots, cucumber, red onions, green onion, and peanuts.
- In a small bowl, combine the peanut butter, rice vinegar, soy sauce, lime juice, and olive oil to make the sauce.
- Combine and serve.
