UPGRADE YOUR INSTANT RAMEN WITH NUTRITIOUS CANADIAN EGGS

You know those instant noodle packs that are usually on sale for under $1? I’ve eaten more of them than I can count. In my childhood kitchen, there was a designated spot in the cupboard for instant ramen that I could grab and cook up whenever I was feeling peckish. I lived off them in university before I started cooking for myself – it’s just so quick and easy to make!

To this day, we have multiple packs in our kitchen. If H is feeling hungry and there isn’t anything prepped, he’ll whip up a bowl for himself. For the longest time, whenever it was his “turn” to cook for us, he’d prepare a fresh pack of instant noodles. They’re just so quick and easy, I don’t blame him.
Although easy to make, instant-noodles are definitely not the most nutritious meal. So, today, I’m here to share my instant ramen hacks so you can upgrade this easy meal into a delicious (and healthier) version! Overall, while this may look fancy, it only takes about 15 minutes in the kitchen.

What You’ll Need To Make This Fancy Instant Ramen

  • 1 egg
  • Instant Ramen
  • Baby boy choy
  • Shrimp

One of my favourite ways to upgrade my instant noodles is adding a soft boiled, poached, or fried egg as the hero ingredient. I love eating eggs any time of the day and they’re just so perfect on top of a bowl of ramen. There’s something so satisfying about that ooey gooey egg yolk all over the top of my noodles – it makes me so excited to eat and completes the whole dish! Even better – just one egg provides approximately six grams of the highest quality protein, which helps to build and maintain muscles and keep a healthy immune system. Like ramen, eggs are also inexpensive and easy to whip up. If you want to cut down on the dishes, I would skip the shrimp and prepare two soft boiled eggs because the more eggs, the better!

If you have some extra time on your hands, you can meal prep delicious soy marinated eggs to make this instant ramen even more impressive.

How To Make This Upgraded Instant Ramen

  • Start with boiling your soft boiled egg. If you’re looking for more specific details, here’s my post on how to make the perfect hard boiled eggs. I added an egg to a pot of water, brought it up to a boil, then let it continue to simmer for four minutes before dunking the egg into an ice bath. Set aside to peel.
  • Next bring a new pot of water to a boil before cooking the noodles according to the instructions on the packet. At the same time, add baby bok choy to the pot. 
  • While the noodles and greens are cooking, set a non-stick skillet on medium high. Heat with olive oil and pan sear the shrimp. If you desire, you can add a sauce of your choice to add extra flavour (I added a mixture of honey and sriracha). Cook the shrimp until it starts to become pink around the edges and no longer sticks to the bottom of the pan. Then, flip the shrimp and let it cook through.
  • Once everything is done, assemble your instant ramen bowl by adding in your shrimp and soft boiled egg to your noodles and baby bok choy!

Upgraded Instant Noodles

If you are not cooking your egg simultaneously in a separate pot: 8 mins
Total Time: 23 mins
Servings: 1 serving

Ingredients

  • 1 egg
  • 1 package instant ramen
  • 5 baby bok choys, rinsed and cleaned
  • 4-5 ounces shrimp, deveined and peeled

Instructions

Soft Boiled Egg

  • In a pot, add your egg and add enough water to cover the egg. Bring the pot up to a boil and once boiled, allow it to cook for 4 minutes before putting the egg into an ice bath.

Instant Ramen and Baby Bok Choy

  • Bring a pot of water to a boil before cooking the noodles according to the instructions on the packet. At the same time, add some baby bok choy to the pot. 

Shrimp

  • In a non-stick skillet on medium high heat with olive oil, pan sear shrimp. If you desire, you can add a sauce of your choice to add extra flavour (I added a mixture of honey and sriracha). 
  • Cook the shrimp until it starts to become pink around the edges and it no longer sticks to the bottom of the pan. Then, flip the shrimp and let it cook through.

Assembly

  • Once everything is done, assemble your instant ramen bowl by adding in your shrimp and soft boiled egg to your noodles and baby bok choy!

BONUS INSTANT RAMEN HACKS

Got some extra time on your hands and want more? Give these instant noodles hack a go

  • Make your own broth base: use your own chicken/beef stock or make a miso soup
  • Top it with a drizzle of toasted sesame oil, toasted sesame seeds, and/or sriracha 
  • Seaweed in stock? throw that in!
  • Add in onion, garlic, and ginger when cooking the noodles for an extra dose of flavour

    I adoreeee soft-boiled eggs in ramen! I need to start making em’ again! This looks delicious! :]

    I tried it and loved it then decided to steam the bok choy long with steaming bean sprouts instead of boiling the bok choy only it so I can spread it with the ramen and also added a bit of teriyaki sauce on top and it was awesome
