Cold Chicken Peanut Lime Noodles
Who’s looking for an easy cold lunch to take to work? I always love a good cold lunch meal preps because sometimes when it’s super hot out, you just don’t want to add to that by eating something hot! This Cold Chicken Peanut Lime Noodles is the perfect solution to those days!
While I originally shot this recipe during the summer (aka while it was hot af and I wanted a chilled lunch at work), this works great in the fall too as I want to skip the microwave line at work year round haha. Also you can warm yourself right up by adding in extra hot sauce to this peanut-lime chicken meal prep ;) Hope you enjoy!
What You Need To Make This Cold Chicken Peanut Lime Noodles Recipe
For the peanut sauce:
- peanut butter
- sriracha (omit if you prefer to)
- garlic
- lime juice
- soy sauce
- honey
- olive oil
- water
For the noodles:
- Chinese egg noodles
- red cabbage
- carrots
- shredded chicken (click to see how I make shredded chicken in the Instant Pot)
How To Make This Easy Cold Noodle Lunch
- In a bowl, whisk together your ingredients for the peanut sauce. Set aside in the fridge.
- Tip: if the peanut sauce is too thick, whisk in an extra tablespoon or two of water.
- Bring a pot of water to a boil and follow the manufacturer directions on the egg noodles.
- While the egg noodles are cooking, finely cut up your cabbage and carrots.
- Once the noodles are done, drain them and rinse in cold water.
- In a large bowl, combine the noodles, cabbage, carrots, chicken, and peanut sauce. Mix until combined.
- Serve chilled or store for up to 4 days in an airtight container.
Tips and Notes On This Cold Peanut Noodle Recipe
- Garnish to your heart’s desire to fancy this up if you have guests! Add in toasted peanuts, green onions, basil, and/or sesame seeds.
- Can’t find egg noodles? Spaghetti or rice noodles works as well.
- If your peanut sauce isn’t combining properly, add a bit more honey as it should help emulsify the sauce.
How To Customize your Noodles
The best part about this Cold Chicken Peanut Lime Noodles meal prep recipe is that it is so versatile and customizable if you have a bunch of random leftover vegetables or meat in your fridge.
- I use leftover shredded chicken as my protein. You can easily sub this for beef, pork, shrimp, tofu, beans, or whatever that’s in your fridge that doesn’t require reheating to eat.
- I used cabbage and carrots as my vegetables. You can either add more to bulk up your meal some more or add other raw vegetables you have available to you such as zucchini, cucumbers, edamame, or if you have a bag of leftover pre-made coleslaw, toss that into the noodles!
- If you are allergic to peanut butter, this recipe also works with other nut butters.

Ingredients
Peanut Sauce
Noodles
- 200 grams Chinese egg noodles
- 4 cups red cabbage, sliced finely
- 3 carrots, sliced
- 2 cups shredded chicken
Instructions
- In a bowl, whisk together your ingredients for the peanut sauce. Set aside in the fridge. Tip: if the peanut sauce is too thick, whisk in an extra tablespoon or two of water slowly, bit by bit.
- Bring a pot of water to a boil and follow the manufacturer directions on the egg noodles.
- Once the noodles are done, drain them and rinse in cold water.
- In a large bowl, combine the noodles, sliced cabbage, carrots, chicken, and peanut sauce. Mix until combined.
- Serve chilled or store for up to 4 days in an airtight container.
