    You will be obsessed with this easy cottage cheese with chives and roasted garlic dip! It’s creamy, flavorful, and so easy to make. This whipped cottage cheese with chives and garlic is perfect as a dip, but you can also use it as a spread for sandwiches, wraps, and more. It’s such a tasty healthy and high-protein recipe that you’ll want to make weekly.

    I’ve truly grown to love cottage cheese so much. Cottage cheese can do so much and has become a staple in my kitchen. Rarely a week has gone by without cottage cheese in my fridge! If you’re not 100% sure about cottage cheese yet then you need to try this cottage cheese with chives and roasted garlic recipe. The food processor changes the texture of the cottage cheese, and the roasted garlic adds a rich, nutty flavor.

    Why You’ll Love This Recipe

    • It’s very easy to make whipped cottage cheese with chives. Roasted garlic comes together in a couple of steps in the oven (or in the air fryer) then you just put it all in a food processor!
    • Whipped cottage cheese is so versatile. You can serve it as a dip with some chopped veggies, spread it on toast, or eat it on its own with some fruit! There are so many ways to enjoy whipped cottage cheese. I even served it with charcuterie, as it spreads like a dream on crackers, and it pairs so well with some spicy salami.
    • This recipe keeps well. I whip up around 2 cups at a time and leave it in the fridge to enjoy throughout the week.

    Ingredients You’ll Need

    Ingredients needed to make cottage cheese with chives and roasted garlic.
    • garlic — I use two garlic bulbs that were on the smaller size and I don’t recommend using any less!
    • oil — your oil of choice to roast the garlic in. I use olive oil.
    • salt — just a bit for the garlic.
    • cottage cheese — cottage cheese is a low-calorie cheese with a mild flavor that’s soft, white, and creamy. It also comes in different milk fat levels and curd sizes. I’m using 2% MF (2% milk fat) and usually just buy whichever container is on sale! I’d skip the low-fat version for whipped cottage cheese, as you want the extra fat to make it creamy. Cottage cheese is a wonderful source of protein, so it’ll leave you feeling satiated. Half a cup of 2% MF cottage cheese (110 grams) has 12 grams of protein!
    • pepper — just a pinch. I recommend always using freshly ground pepper as it is more flavorful than pre-ground pepper.
    • chives — I love how the chives taste mildly like onion with a slight garlicky note, as it pairs well with the roasted garlic.

    How to Make Whipped Cottage Cheese with Chives and Roasted Garlic

    • Heat the oven to 400F.
    • Remove the paper-thin skin of the garlic.
    • Trim the top ¼ inch off the top of the garlic bulb. Place the heads of garlic onto a piece of tin foil and drizzle with olive oil and a pinch of salt.
    • Tightly wrap the garlic in the foil. Air fry for 20 to 25 minutes or roast in the oven for 40 to 60 minutes. When cool to the touch, remove the garlic cloves from the skin by squeezing the cloves out or simply peeling the skin off.

    • Add cottage cheese, roasted garlic cloves, and ground pepper to a food processor. Blend for 2 to 4 minutes or until smooth and creamy. The roasted garlic might not fully blend into the cottage cheese immediately, and you might need to blend it longer.
    • Add the chives and blend until the chives are evenly mixed into the whipped cottage cheese with roasted garlic.

    Recipe Tips and Notes

    • A bit of citrus, like lemon or lime zest, with some juice, adds a bright, tangy flavor.
    • I added the chives afterward as the garlic takes a bit to blend into the cottage cheese, and I didn’t want the chives to completely disappear into the cheese.

    Serving Ideas

    • Turn this whipped cottage cheese into a fun dip by drizzling on top with a bit of high-quality olive oil, runny honey (or hot honey), hot sauce, or chili crisp oil!
    • Serve this with crusty bread, pita bread, pita chips, toast, bagel (air fryer bagel chips), crackers, or spread it in a sandwich (like my pesto chicken sandwich or pesto turkey sandwich). It also pairs well with avocado toast or hummus toast.
    • Turn it into a breakfast bowl like in my cottage cheese with fruit bowls. Add some granola to make it even more filling.
    • Add it to pasta and turn it into a protein-packed pasta sauce like in this cottage cheese pasta bake. If this is the route you’re picking, I recommend adding even more roasted garlic to pair with the pasta!
    • Serve it with some vegetables such as cucumbers, tomatoes, carrots, bell peppers, and celery.
    • Spoon some blended cottage cheese over some pancakes for a slightly savory breakfast!

    Make Ahead Tips

    • Meal prep: transfer the blended cottage cheese with chives to an airtight container in the fridge for up to 4 days.
    • Freezer: I do not recommend freezing cottage cheese as it could change the texture when thawed.
