earl grey tea — you can use loose leaf or a bag. I recommend using good-quality tea as some tea bags do not use whole tea leaves but use small broken leaves and tea dust. For ease, I’m using tea bags.
sugar — I use simple white granulated sugar. Nothing fancy! You can also use brown sugar if you want a deeper caramel taste.
water — you’ll need hot water to steep the earl grey in.
How to Make Earl Grey Simple Syrup

- To a small pot, add hot boiled water and four tea bags. Steep the earl grey tea bags for 4 to 5 minutes.
- Discard the tea bags and add the sugar to the pot.
- Simmer, uncovered, for 15 to 20 minutes, making sure to stir until the sugar has completely dissolved.
- Let the syrup cool to room temperature and transfer to an airtight container before storing in the fridge or using.

Recipe Tips and Notes
- If it gets too thick for your liking, you can stir a teaspoon of water at a time into the syrup until it’s at your desired consistency. Simple syrup tends to be runny but if simmered for too long, it will start thickening as the water evaporates.
- Make sure to lower the heat to simmer once the syrup reaches a boil. You don’t want too much water to evaporate.
- If you want some caramel notes in your earl grey simple syrup, you can swap white sugar for brown sugar.
