These Healthy Chicken Stuffed Sweet Potatoes are an easy and healthy weeknight dinner recipe the whole family will enjoy! Plus it can be easily turned into a meal prep for the week. (Gluten-free and dairy-free as well)
Healthy Chicken Stuffed Sweet Potatoes
So I may have fallen down the rabbit hole of making stuffed sweet potato for every meal. I mean, there’s a baked sweet potato in my fridge as I type up this post! If you’ve seen my previous posts relating to sweet potatoes, you’ll know why I’ve been on such a sweet potato kick lately.
Sweet potatoes are full of potassium and fibre in addition to be low in fat and calories. Sweet potatoes also provide you with pretty much your daily dose of vitamin A as well! Sweet potatoes are definitely something you’re going to want to be a part of your meal prep.
Lately, I’ve also really been loving finding ways to use cashew cream (totally not because I used a Bulk Barn coupon and ended up with 3 lbs of raw cashews…) and I love how it can easily be made into a savoury sauce/cream. For this easy chicken stuffed sweet potatoes, I’ve made a bit of a riff off pesto for my cashew cream and coated my chicken in it and I totally am in love with this combo! (Note: if you do not have cashew cream to make this recipe, you can totally sub in with pesto!)
What You’ll Need To Make This Easy Chicken Stuff Sweet Potatoes
For the roasted sweet potatoes you’ll need…
- sweet potatoes
- olive oil
- salt
- pepper
- garlic powder
For the chicken you’ll need
- shredded chicken (or leftover chicken)
- savoury cashew cream or pesto

How To Make The Easiest Chicken Stuffed Sweet Potatoes
- Heat oven to 400F.
- Lightly coat your sweet potatoes (after scrubbing and patting dry) with some oil and sprinkle some salt and garlic powder on. Prick them 4-6 times across the surface with a fork.
- Place them on a sheet pan and bake until tender, usually 45 to 50 minutes. (Give the potatoes a gentle squeeze on the side to see if they’re done, they should feel tender and not firm.)
- While the sweet potatoes are in the oven, coat your shredded chicken with the savoury cashew cream or pesto.
- Once the sweet potatoes have cooled, cut each one lengthwise and top generously with chicken mixture.
How To Meal Prep Chicken Stuffed Sweet Potatoes
- Store the sweet potatoes in a separate airtight container than the chicken. This way you can reheat the sweet potato when ready to eat and then stuff the chicken back in. I prefer my chicken cold and sweet potato warm so this is how I store it.

Ingredients
- 4 sweet potatoes
- 2-3 tbsp olive oil
- 1 tsp salt
- 1 tsp pepper
- 1 tsp garlic powder
- 3-4 cups shredded chicken, or leftover chicken
- 1/3-1/2 cup savoury cashew cream or pesto, as much or as little you'd like to coat the chicken with
