    This super simple Lentil Salad with Pomegranate Seeds is perfect for holidays or whenever you’re feeling a little festive.

    Why You’ll Love This Salad

    • It’s super simple! I love to keep things simple so this salad takes only a few simple ingredients and a couple of minutes.
    • It’s festive! I love the pop of colour that the pomegranate arils give to the salad as well as the burst of flavour it has. It’s great during the holidays thanks to the colour.
    • It goes with everything. I love how this lentil salad pretty much goes with everything. Change up the salad dressing to match whatever is being served!

    What You’ll Need

    • spinach
    • lentils – here’s how I cook my green lentils in the Instant Pot in 9 minutes! Lentils can be made ahead of time.
    • shallots
    • pomegranate arils
    • pumpkin seeds
    • optional salad dressing – you can use a salad dressing of choice. You can make your own or buy a bottle. I like using my creamy hummus salad dressing or my creamy roasted garlic dressing.

    How to Make This Lentil Salad

    • In a large serving platter or bowl, combine the spinach, cooked lentils, sliced shallots, pomegranate seeds, and pumpkin seed. Mix.
    • Drizzle on a salad dressing of your choice.

    Recipe Variations

    • Add roasted cubed butternut squash or sweet potatoes.
    • Add in sliced avocados.
    • Add in additional mixed greens.
    • Add in additional seeds & nuts such as almonds, sunflower seeds, cashews, etc.
    • Add in additional fruit such as diced apples.

    • 6 cups baby spinach
    • 2 cups lentils, cooked
    • 3 shallots, sliced
    • 1½ cup pomegranate arils
    • ½ cup pumpkin seeds, or more
    • optional salad dressing

    • In a large serving platter or bowl, combine the spinach, cooked lentils, sliced shallots, pomegranate seeds, and pumpkin seed. Mix.
    • Drizzle on a salad dressing of your choice if you choose to.
