Peri Peri Chicken Meal Prep
You might be wondering, what is peri peri chicken? Peri peri is best known as a chili based sauce used as a seasoning or marinade for chicken. You might even recognize it from the popular restaurant Nando’s as they are known for their peri peri chicken dish. Today, I’m going to share with you how I make a “short cut” version of the dish as a meal prep that you can make in under 35 minutes. I call this the short cut version because I use a pre-mixed spice as well as pairing it with some pre-cut vegetables so my prep time is cut down considerably.
What You’ll Need To Make this Peri Peri Chicken Meal Prep
- chicken breasts
- olive oil
- peri peri seasoning (if you want to make your own, here’s one from Canadian Living)
- Mann’s Fresh-Cut Sweet Potato Cubes
- garlic powder
- salt
- Mann’s Broccolini®
- red chili flakes
The peri peri seasoning mix that I use is from PC Black Label. Alternatively, you can purchase Nando’s peri peri seasoning from Amazon if you don’t live in Canada.
In addition to the ingredients, for this meal prep to go smoothly, I use three quarter sheet pans. Since everything has a slightly different baking time, I split them up on their own sheet pans so I can remove them when the time is up. If you don’t have three quarter sheet pans, you can always use a larger half sheet pan lined with tin foil to divide up the ingredients so you can quickly remove a “section” once the time is up.
How To Make This Sheet Pan Peri Peri Chicken Meal Prep
- Heat your oven to 425F.
- While the oven is heating up, cube your chicken breasts and lightly coat them in some olive oil and the peri peri seasoning. Set it aside.
- Next, coat your sweet potato cubes with olive oil, garlic powder, and salt. Set aside.
- Finally coat your broccolini in olive oil and sprinkle on some red chili flakes and lightly salt. Set aside.
- Once the oven is ready, place all three sheet pans into the oven. Set an alarm for 25 minutes.
- At the 15 minute mark, check on your chicken and broccolini, if they are done, remove them from the oven.
- If you want your broccolini to be crispier, let it roast for another 5 minutes.
- Before letting your sweet potato cubes finish roasting, give them a quick stir or shake of the pan.
- Once done, let everything cool off before portioning up the meal.
Tips and Notes on Making This Peri Peri Meal Prep
- Adjust the amount of veggie to chicken ratio as necessary! This is just how much chicken I can eat per serving – if you require more, you can swap out the quarter sheet pan to a half and add more of the chicken (or vegetables).
- I tried out this set of Rubbermaid Brilliance for my meal prep containers instead of my regular glass ones. So far, they are holding up really well and are not holding onto smells like other plastic containers. It is a great alternative if the glass containers are too heavy for you.
- You can always put your sweet potatoes in the oven first to have them roast longer if your oven is ready. I personally am able to prep everything (since there’s barely any chopping with Mann’s Fresh Vegetables!) before the oven is even done heating to 425.

Ingredients
- 3 chicken breasts, cubed
- 2-3 tbsp olive oil, divided up into 3
- 1.5 tbsp peri peri seasoning
- 454 grams Mann’s Fresh-Cut Sweet Potato Cubes, (1 pack)
- 1 tsp garlic powder, or to taste
- 1/3 tsp salt, or to taste
- 340 grams Mann’s Broccolini®, (2 packs)
- 1/2 tsp red chili flakes, or to taste
Instructions
