Meal Prep with Ground Chicken
I love ground chicken as it’s super budget friendly and is almost always available! Usually I make meatballs with my ground chicken but lately I’ve really been loving the these ground chicken patties. They’re pretty similar to my go-to meatball recipe but I’ve some extra dried herbs to it.
Why You’ll Love These Chicken Patties
- They go with everything! Serve them with a side of salad, in between burger buns, with some rice, with some roasted potatoes, mashed potatoes, etc. You can eat them however you want!
- They’re easy to make. You mix everything together then shape them into patties and into the oven they go! No fancy equipment needed.
- They’re healthy. Since they’re oven baked, there’s no extra oil needed to fry them up on a skillet.
What You’ll Need to Make Chicken Meal Prep
- ground chicken
- seasoning: salt, pepper, garlic powder, onion powder, paprika powder, dried parsley flakes, dried basil
- egg
- panko crumbs — swap for gluten-free panko/breadcrumbs to keep this gluten-free.
- powdered parmesan
- olive oil
How to Make Baked Chicken Patties
- Heat the oven to 400F.
- Prepare two sheet pans by lining them with parchment paper and spraying with non-stick.
- While the oven is heating, mix all of the ingredients together. Do not over mix.
- Divide the mixture up equally into 16 portions before shaping them into patties and placing them out onto the sheet pans. I just roll them into a giant ball then flatten them.
- Bake for 20-25 minutes. Flipping them at the half way mark.
- Serve with a splash of lemon juice from a lemon wedge.
Make Ahead Tips
- Meal Prep: Store in the fridge in an airtight container for up to 5 days.
- To Reheat: To reheat, simply microwave it until warmed through.
- Freezer: You can freeze cooked or raw chicken patties. Freeze on a line sheet pan before transferring to a freezer safe bag or container.
- To Reheat: From frozen, bake at 400 degrees for 25-30 minutes. If cooked, bake at 400 and cover them with foil to prevent drying for 10-15 minutes.
More Tips
